    This research work proposes a process management model for the production area of LUA Bakery and Coffee, based on guidelines focused on Good Manufacturing Practices (GMP). The central objective is to provide tools for the standardization of production processes, given that the company currently lacks a solid process management system. An initial diagnosis was conducted through direct observation, which enabled the collection of detailed information regarding the organization's operational activities, machinery, processes, and functional areas. The core problem was identified, and the processes were classified into strategic, operational, and support categories. Subsequently, the process map and the corresponding characterizations were developed; this technical instrument facilitated the definition of inputs, activities, outputs, required resources, and responsibilities for each process. The analysis based on the external instruction manual for the evaluation of restaurants, cafeterias, and other collective catering establishments from the National Agency for Regulation, Control, and Sanitary Surveillance (ARCSA) evidenced an 87.19% compliance rate with GMP. However, deficient employee knowledge regarding hygiene and food safety, alongside the lack of waste bins classified by waste type, are weaknesses currently exhibited by the cafeteria. Finally, a process and procedure manual was developed under the process management approach. This technical instrument was designed as a structured guide and integrates management indicators and registration forms aimed at controlling vital process aspects and ensuring the continuous optimization of LUA Bakery and Coffee's operations.

    The Vet Cirujano Veterinary Clinic traditionally operated under an empirical management system, which led to variability in service delivery. Given this situation, this research proposes a process-based management model grounded in a procedures manual. The objective is to formally structure responsibilities, inputs, outputs, and operational controls, adapting human healthcare hospital management methodologies to the veterinary environment to guarantee consistent, high-quality service focused on customer care. The project began with gathering information using SIPOC diagrams to understand the current operational processes. Next, an ISO 9001:2015 checklist was applied to identify critical gaps and opportunities for improvement. Based on this information, process characterization sheets were developed, which served as the technical basis for creating the final procedures manual. The proposed model standardized activities and established traceability mechanisms for managing complaints and reducing operational errors. By eliminating improvisation, the client receives consistent, high-quality care regardless of external factors. In other words, the document provided the clinic with a solid database for implementing continuous improvement processes and service satisfaction standards.

    This research aimed to develop a Business Process Management model for the production plant of Los Champiz through the integration of digital technologies. The study was motivated by the presence of empirically executed activities, limited operational documentation, process variability, and deficiencies associated with operational control, traceability, and information management. Initially, a process characterization stage was conducted to assess the current operational conditions. Subsequently, process standardization was carried out through time studies and the development of management indicators for operational monitoring and control. In addition, it was identified that 86.67 percent of the analyzed processes did not employ any type of digital technology or technological tool to support Business Process Management. Consequently, digital technologies focused on automation, traceability, and information management were proposed. Finally, a process and procedures manual supported by digital technologies was designed. The main results included the documentation and standardization of production processes, the definition of standard times and performance indicators, as well as the proposal of digital technologies aimed at improving operational control. It is concluded that the proposed model constitutes a technical tool to strengthen process organization, standardization, and operational management.

    This study developed a sustainable process management model to improve the functioning of the production area at Andrews Jeans. The research arose from a lack of standardisation, inefficient use of resources and frequent variations in quality, problems that affected the company's costs and competitiveness. The aim of this work is to structure a process management model that integrates operational and sustainable practices. To this end, qualitative and quantitative techniques were applied with the support of interviews, direct observation, document analysis, and operational records. These techniques made it possible to examine the entire production chain, from the receipt of raw materials to storage. Tools such as process sheets, flowcharts, ABC matrices, sustainability checklists, and FMEA risk assessment instruments were used for the analysis. The results showed that the company operated with empirical procedures, poor measurement of indicators and high levels of waste, especially in cutting, riveting/buttoning and broaching. Standardization made it possible to define activities, responsibilities and controls in each process. In addition, the proposal incorporated sustainability criteria aimed at managing waste and optimising resources. The process manual compiled the entire operational structure and became the main internal management tool. The proposed model improved traceability and provided an orderly basis for future improvements in efficiency and sustainability.

    This research develops a process management model focused on Good Poultry Farming Practices (GPP) for EGGFARM, a company dedicated to commercial egg production in the province of Tungurahua. The study arose from the need to organize, document, and standardize production activities, as well as to evaluate the level of compliance with GPP regulations. The methodology used was based on interviews, direct observation, and document analysis, integrated under the PDCA cycle (Plan, Do, Check, Act) to identify, structure, and improve the processes involved in the production line. This approach made it possible to identify inputs, outputs, responsible parties, controls, and performance indicators for each operational and support process. The assessment of GHP compliance, using the official Agrocalidad Checklist, determined an overall compliance rate of 73.18%. By category, 94.64% compliance was achieved in infrastructure, 82% in biosafety, 90% in animal welfare, 90% in environmental management, and 60% in documentation and records, showing that the main gap is related to the absence of formally structured documents. As a result, a procedures manual was developed, along with characterization sheets, a process map, and indicators aligned with GAP requirements. This tool strengthens standardization, traceability, and operational control and prepares EGGFARM for future audits and certification processes.

    The real estate sector in the Ambato canton is experiencing sustained growth; however, several companies still manage their operations and finances in a segmented, empirical manner, with limited strategic planning. This research aims to design a process-based management model that integrates the operational and financial chain of a real estate company in the city, in order to increase its efficiency, profitability, and organizational sustainability. The study was conducted using both bibliographic research and field research approaches. A structured interview was conducted with the general manager, and direct observation of internal processes was carried out, allowing for the diagnosis of shortcomings in planning, sales supervision, document standardization, portfolio control, lack of budgeting, and poor coordination between operational and financial areas. These deficiencies generate rework, operational cost overruns, excessive workload, legal risks, and low performance in the sales area. As a proposal, a model was designed based on process management principles, incorporating key performance indicators (KPIs), document control, continuous monitoring of acquisitions, standardization of roles, and the use of process modeling tools for the clear representation of activities. The proposed integration will allow for revenue projections, control of operating expenses, measurement of actual net profit generated, and improved customer satisfaction. The expected results demonstrate that a process-based model not only optimizes operational management but also strengthens financial performance, consolidating a structured, replicable, and data-driven decision-making framework, thus contributing to the competitiveness and sustainability of local real estate companies.

    This research proposes a process-oriented management model aimed at strengthening food safety and operational efficiency at Embutidos Don Jorge. The main purpose was to document and standardize the production process by establishing uniform procedures, ensuring a consistent and controlled flow of activities, in line with Good Manufacturing Practices (GMP). An initial diagnosis showed that the company lacked a management model, had a total absence of operational documentation and control indicators, and carried out its activities empirically. It was also found that staff training on safety issues was limited. After contextualizing the company's situation, an ABC analysis was applied to identify the most relevant product, determining that the object of study would be the “Paisa” type 1 barbecue chorizo. Subsequently, a detailed survey of operations was carried out using process sheets and flowcharts. Regarding compliance with Good Manufacturing Practices, a checklist based on Annex 1 of Resolution ARCSA-DE-2025-007-DASP was applied, revealing partial compliance of 66.67 %, pointing to deficiencies in ongoing training, documented cleaning and disinfection programs, and the absence of systematic records. In response to these shortcomings, control indicators were established, and a manual of processes and procedures was developed to ensure uniform implementation in accordance with Good Manufacturing Practices guidelines. This manual provides key guidelines for proper operational organization and seeks to optimize efficiency, reduce variability, and ensure the quality and safety of the final product.

    This research proposes the design of a Process Management System for the administrative area of the Municipal Public Company for Integral Solid Waste Management of Ambato (EPM-GIDSA). The system focuses on the administrative procedures of the Planning and Business Management macroprocess, based on an integral methodology aimed at strengthening the articulation between planning and budgeting. It is also grounded in the guidelines of ISO 9001:2015 with the purpose of documenting activities, responsibilities, and objectives through indicators that allow measuring organizational performance and sustainability. To fully understand the company’s reality, its current practices were first analyzed through the collection of relevant information. Then, the administrative processes were mapped to identify how the institution is organized, how its ordinances and statutes operate, and how these elements interact with one another. During this assessment, sustainability criteria were also applied, incorporating environmental indicators such as energy consumption under ISO 50001, the use of certified materials, and compliance with ecological regulations. Additionally, economic and social aspects were considered, including the presence of ethical codes, training programs, and inclusive employment policies. This approach allowed not only to diagnose the processes, but to do so from a more responsible and sustainable perspective. Through this process mapping and the development of flowcharts, the absence of control mechanisms over the activities carried out within the organization is identified. Therefore, indicators are developed to evaluate, measure, and improve the performance of these activities. Finally, the preparation of procedures manuals enables the company to significantly enhance its management by clarifying how procedures are interrelated, thus providing greater understanding of the sequence of activities and the risks associated with each one.

    The implementation of a standardized system has become a key strategy for optimizing operations. In this context, the present research, conducted within the framework of the automotive industry, proposes the establishment of a Process Management System based on the principles of the ISO 9001:2015 standard. This system serves as an improvement proposal for the Plastic Painting process at CIAUTO, a company located in Ambato that has been assembling vehicles since 2013. With activities spanning welding, painting, assembly, and testing lines, the primary objective is the standardization and documentation of processes to enhance efficiency and productivity while fostering a culture of continuous improvement. The initial analysis of the company’s situation was conducted through direct observation and an interview with the head of the Painting Plant. This analysis identified several issues, including the absence of documented procedures, non-compliance with operational sequences, and tasks performed empirically. These shortcomings resulted in unproductive times, defective products, and a lack of controls to evaluate process performance. For the study, the SWM G01-F model was selected due to its workload demands. Processes were classified by developing a flow diagram and process characterizations using SIPOC diagrams, which identified suppliers, inputs, processes, outputs, and customers. Furthermore, detailed work instructions were created for the 13 operations. To standardize the process, standard times were determined, and a line balancing chart was developed to ensure an efficient distribution of tasks, minimize idle times, and guarantee a continuous flow between stations. Weaknesses were identified, and specific improvements were proposed for the system. Finally, a process and procedure manual were developed to serve as a guide for staff training. This manual includes detailed descriptions of activities as well as records for monitoring the production system. The focus is on continuous improvement, compliance with quality standards, and customer satisfaction.

    This research presents a process management proposal for Liwi Medical Footwear company, aimed at structuring and documenting its operational processes. The methodology encompassed an initial diagnosis through interviews and surveys, followed by process identification and classification utilizing process mapping and value chain analysis. The weighted factors method was employed for critical process selection, enabling the prioritization of those with the highest organizational impact. The study resulted in comprehensive documentation of operational processes, including process sheets, flowcharts, management indicators, and a process and procedures manual. This documentation provides a structured foundation for the potential implementation of a process management system, establishing metrics for operational evaluation and continuous improvement. The proposal developed constitutes a strategic asset for Liwi Medical Footwear, offering a systematic view of its operations and establishing the groundwork for future improvement initiatives. The designed model maintains the necessary flexibility to adapt to organizational changes, allowing updates as the company's needs evolve.
