Carrera de Ingeniería Industrial.This research work proposes a process management model for the production area of LUA Bakery and Coffee, based on guidelines focused on Good Manufacturing Practices (GMP). The central objective is to provide tools for the standardization of production processes, given that the company currently lacks a solid process management system. An initial diagnosis was conducted through direct observation, which enabled the collection of detailed information regarding the organization's operational activities, machinery, processes, and functional areas. The core problem was identified, and the processes were classified into strategic, operational, and support categories. Subsequently, the process map and the corresponding characterizations were developed; this technical instrument facilitated the definition of inputs, activities, outputs, required resources, and responsibilities for each process. The analysis based on the external instruction manual for the evaluation of restaurants, cafeterias, and other collective catering establishments from the National Agency for Regulation, Control, and Sanitary Surveillance (ARCSA) evidenced an 87.19% compliance rate with GMP. However, deficient employee knowledge regarding hygiene and food safety, alongside the lack of waste bins classified by waste type, are weaknesses currently exhibited by the cafeteria. Finally, a process and procedure manual was developed under the process management approach. This technical instrument was designed as a structured guide and integrates management indicators and registration forms aimed at controlling vital process aspects and ensuring the continuous optimization of LUA Bakery and Coffee's operations.Item Aplicación web utilizando un enfoque basado en componentes para la gestión integral de estimaciones y ofertas en la empresa Sifizsoft(Universidad Técnica de Ambato. Carrera de Tecnologías de la Información.The purpose of this work was to develop a web application with a component-based approach for the comprehensive management of estimations and offers in the company. Sifizsoft is a software provider company for the cooperative sector that managed its estimation and commercial offer processes through Excel templates and email, which caused data loss, lack of traceability, and delays in delivering proposals to clients. The research adopted a qualitative and quantitative approach with a technological modality. Eighteen surveys were applied to staff from the operational and commercial areas, accompanied by five direct observation sheets. The results showed that 55.6% of the staff identified delays in offer delivery as the main problem, and 44.4% indicated that automating the estimation record and improving tracking control were the priority. A web application with a component-based approach was developed using Next.js, React and TypeScript on the frontend, and ASP.NET Core on the backend, with a SQL Server database, forming a full-stack architecture. The application incorporates state flows for estimations and offers, role-based access by area, email notifications and read-only integration with the SifizPlanning system. The solution covers the complete cycle from the reception of the technical requirement to the formalization of the commercial offer. The application made it possible to replace non-specialized tools with a centralized system, with actor-level traceability and real-time tracking indicators.Item Propuesta de mejora para el proceso ELPO de la empresa Ciauto mediante herramientas de Lean Manufacturing.(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.The electrocoating process ELPO IN CIAUTO has operational limitations that can be improved using Lean Manufacturing tools; an analysis of the current situation identified non-productive times that can be mitigated by implementing machinery to transport units within the ELPO process and increase production to 35 units per day. A production line balancing simulation was done with the goal of proposing the introduction of two additional shuttle buses to the production line, which made it possible to analyses the workflow and the feasibility of producing 50 units per day. The results obtained demonstrated that implementing the improvements proposed in the document reduces waiting times and makes better use of available human and material resources. Furthermore, the simulation shows that the proposal allows for an increase in current production of 15 units, which represents a 42.86 percent increase in productivity. In conclusion, the application of Lean Manufacturing tools in automated processes presents an alternative for optimizing the performance by reducing non-productive times and improving productivity.Item Modelo de simulación para la optimización y resiliencia productiva en la empresa textil Tefy Tex.(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.This research project develops a discrete-event simulation model in FlexSim to verify system behavior and optimize resource management. Input data is obtained using work measurement tools to replicate the inherent conditions of the production system. In this context, small and medium-sized enterprises in the sector face growth constraints stemming from low adoption of technological tools, empirical planning, and reactive decision-making, which compromise their responsiveness. Three scenarios are evaluated, each with 20 replicates. The current scenario (S1) reveals bottlenecks in the drying subprocess, employee operational time utilization of 45,76%, machinery utilization of 27,52%, and an OTD of 0,66, demonstrating that the system has limited adaptability. On the other hand, the disruptive scenario (S2), which simulates increased demand with additional resources and extended working hours, reduced the OTD to 0,43, demonstrating that increasing the workforce does not resolve the structural constraint. The optimized scenario (S3) shows that operating with three employees in the overall process, a batch size reduced to 10 units, and extended hours increases operational time to 64,37% and machine utilization to 37,85%, achieving production levels comparable to (S1) but with two fewer employees. The results confirm that resilience and increased productivity are achieved through the logical synchronization of operational flow and not through the empirical oversizing of resources.Item Lean service para la optimización logística del montaje y desmontaje de equipos en eventos en vivo de la empresa “La máquina del sonido”(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.The objective of this research is to optimize the logistics processes involved in setting up and dismantling equipment at La Máquina del Sonido by applying Lean Service tools aimed at reducing waste and improving operational efficiency. The study was conducted due to existing problems in event logistics operations, where there are long work times, unnecessary trips, disorganization in the warehouse, difficulty locating equipment, and a lack of standardized procedures all of which directly affect service quality and adherence to established timelines. For the initial assessment, techniques such as direct observation, analytical flowcharts, time studies, and VSM analysis of the current state are used, enabling the identification of waste related to unnecessary movements, unnecessary transport, and other factors. Based on the findings, Lean Service tools tailored to the company’s needs are selected and implemented, including the 5S methodology, focused on sorting, setting in order, and cleaning work areas; visual management, aimed at facilitating the rapid identification of equipment and materials through signage and coding; and standardized work used to define procedures and operational sequences for critical process activities. The implementation of these tools made it possible to reorganize the warehouse, sort equipment, establish visual signage, code equipment and accessories, and define standardized procedures for critical activities in the processes studied. The results obtained demonstrate that Lean Service is an effective alternative for improving efficiency and logistics performance in companies dedicated to the production of live events.Item Gestión de la bodega institucional del Gobierno Autónomo Descentralizado Municipal San Pedro de Pelileo(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.This thesis aimed to manage the institutional warehouse of the Decentralized Autonomous Municipal Government of San Pedro de Pelileo, due to deficiencies in infrastructure, processes, inventory management, occupational safety, and performance indicators. The research used a mixed approach (quantitative and qualitative), combining bibliographic, field, and applied methods. The diagnosis was conducted using the IPISI methodology, which examined the five key dimensions of the warehouse and identified floor deterioration, obstructed aisles, receiving and dispatch processes carried out empirically, fire extinguishers and signage covered by stored materials, and the absence of a formal indicator system. To classify the 1,008 inventory items, a combined ABC-FSN matrix was applied, revealing that 91.33 percent of current-use products and 92.19 percent of investment products show low or zero turnover, highlighting nine AF-category products (lubricants, oils, paints, and reams of paper) as the most operationally critical group. The physical layout proposal was divided into six functional areas, whose surfaces were calculated using the Guerchet Method and whose spatial arrangement was defined using the SLP methodology, resulting in 91.68 square meters for general storage. This was complemented by a 5S implementation plan, the standardization of receiving, storage, and dispatch processes, and the design of five key performance indicators (utilization rate, non-moving inventory ratio, record accuracy, inventory tracking, and 5S audit compliance), aimed at ensuring the sustainability of the proposed improvements.Item Desarrollo de un modelo conceptual para la gestión inteligente del tráfico urbano: integración del método Maxpressure, herramientas de Ingeniería Industrial y Tecnologías de industria 4.0(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.The purpose of this study was to optimize the procurement management of the company “Pieles Andinas” through a comprehensive analysis of supplier evaluation, the criticality of inputs, and the feasibility of importing raw materials and finished products, with the aim of enhancing operational efficiency and decision-making in the procurement process. The study was conducted using an applied, descriptive approach, employing technical tools designed for supplier evaluation, criticality analysis, and financial assessment. The supplier evaluation considered criteria related to quality, price, delivery times, reliability, and payment terms, enabling the identification of opportunities for improvement in the procurement process. The results show that the proposed import strategy achieves a total nationalization value of USD 18.197,21. Similarly, by applying the artisanal regime, a 42,28% reduction in the AD-VALOREM component is determined, resulting in a nationalization cost of USD 17.346,90, which represents an economically favorable alternative for the company. Finally, the financial evaluation of the Eco-Friendly finished products shows favorable results in the positive scenario, with a Net Present Value (NPV) of USD 6.300,58 and an Internal Rate of Return (IRR) of 51,43%, indicators that demonstrate the project’s economic feasibility, as well as its potential to strengthen the organization’s competitiveness, commercial diversification, and operational sustainability.Item Diseño de la planta de producción orientado a la eficiencia operativa en la empresa de confección Aiditex(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.The research focuses on the optimization of the production plant of AIDITEX, an underwear manufacturing company, aimed at improving operational efficiency and productivity through area reorganization, modular line balancing, and manufacturing cells. A diagnosis of the organizational structure, ABC product analysis, time and motion studies, analytical cursograms, and flow diagrams is conducted to identify bottlenecks, unnecessary movements, and inefficient distribution of machinery and operators. As an improvement proposal, the SLP method and Guerchet method are applied to design layout alternatives with cellular distribution, prioritizing functional proximity, operation sequence, and optimal resource allocation, complemented by strategies for resource organization, process standardization, and reduction of non-productive times. The results demonstrate reduced travel distances, improved material flow, and decreased non-productive times, increasing the efficiency and competitiveness of the company. This study combines field methods, statistical analysis, and industrial planning tools, providing a replicable model that integrates systematic planning and manufacturing cells, offering an innovative and practical solution to optimize production processes in similarly sized textile companies.Item Diseño de un modelo logístico basado en la norma ISO 28000 para la gestión de la seguridad en el servicio de encomiendas de la Cooperativa de Transportes Trasandina Express(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.Cooperativa de Transportes Trasandina Express provides parcel delivery service as part of its operational activities; however, weaknesses related to security, traceability and documentary control of packages were identified. For this reason, this research project aimed to propose a Security Management System based on ISO 28000:2022, focused on strengthening service control from package reception at the origin agency to final delivery to the recipient. For the diagnosis, observation sheets, a staff survey, an interview with the manager and a checklist based on the requirements of ISO 28000:2022 were applied. The results showed deficiencies in the uniform application of controls, information recording, incident management, operational supervision and package tracking during the reception, temporary storage, loading, transport, unloading and delivery processes. In addition, a risk assessment was carried out using probability and impact criteria, which made it possible to identify critical points that may affect the security, continuity and reliability of the service. As a result, a Security Management System manual was designed, composed of a policy, objectives, risk matrix, procedures, records, indicators, document control, internal audit, management review and improvement actions. The proposal allows operational activities to be standardized, documented evidence to be preserved, package traceability to be improved and decision-making to be supported based on recorded information. In this way, the proposed system contributes to reducing exposure to losses, damages, complaints and incidents within the parcel delivery service.
