Carrera de Ingeniería Industrial.The Vet Cirujano Veterinary Clinic traditionally operated under an empirical management system, which led to variability in service delivery. Given this situation, this research proposes a process-based management model grounded in a procedures manual. The objective is to formally structure responsibilities, inputs, outputs, and operational controls, adapting human healthcare hospital management methodologies to the veterinary environment to guarantee consistent, high-quality service focused on customer care. The project began with gathering information using SIPOC diagrams to understand the current operational processes. Next, an ISO 9001:2015 checklist was applied to identify critical gaps and opportunities for improvement. Based on this information, process characterization sheets were developed, which served as the technical basis for creating the final procedures manual. The proposed model standardized activities and established traceability mechanisms for managing complaints and reducing operational errors. By eliminating improvisation, the client receives consistent, high-quality care regardless of external factors. In other words, the document provided the clinic with a solid database for implementing continuous improvement processes and service satisfaction standards.Item Modelo de gestión por procesos en la planta de producción de los Champiz mediante la integración de tecnologías digitales.(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.This research aimed to develop a Business Process Management model for the production plant of Los Champiz through the integration of digital technologies. The study was motivated by the presence of empirically executed activities, limited operational documentation, process variability, and deficiencies associated with operational control, traceability, and information management. Initially, a process characterization stage was conducted to assess the current operational conditions. Subsequently, process standardization was carried out through time studies and the development of management indicators for operational monitoring and control. In addition, it was identified that 86.67 percent of the analyzed processes did not employ any type of digital technology or technological tool to support Business Process Management. Consequently, digital technologies focused on automation, traceability, and information management were proposed. Finally, a process and procedures manual supported by digital technologies was designed. The main results included the documentation and standardization of production processes, the definition of standard times and performance indicators, as well as the proposal of digital technologies aimed at improving operational control. It is concluded that the proposed model constitutes a technical tool to strengthen process organization, standardization, and operational management.Item Modelo de gestión por procesos enfocado en la inocuidad alimentaria en la empresa embutidos Don Jorge(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.This research proposes a process-oriented management model aimed at strengthening food safety and operational efficiency at Embutidos Don Jorge. The main purpose was to document and standardize the production process by establishing uniform procedures, ensuring a consistent and controlled flow of activities, in line with Good Manufacturing Practices (GMP). An initial diagnosis showed that the company lacked a management model, had a total absence of operational documentation and control indicators, and carried out its activities empirically. It was also found that staff training on safety issues was limited. After contextualizing the company's situation, an ABC analysis was applied to identify the most relevant product, determining that the object of study would be the “Paisa” type 1 barbecue chorizo. Subsequently, a detailed survey of operations was carried out using process sheets and flowcharts. Regarding compliance with Good Manufacturing Practices, a checklist based on Annex 1 of Resolution ARCSA-DE-2025-007-DASP was applied, revealing partial compliance of 66.67 %, pointing to deficiencies in ongoing training, documented cleaning and disinfection programs, and the absence of systematic records. In response to these shortcomings, control indicators were established, and a manual of processes and procedures was developed to ensure uniform implementation in accordance with Good Manufacturing Practices guidelines. This manual provides key guidelines for proper operational organization and seeks to optimize efficiency, reduce variability, and ensure the quality and safety of the final product.Item Estandarización de los procesos productivos de la empresa Consutex con enfoque en economía circular(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial.The objective of this research was to standardize the production processes of the textile company CONSUTEX under a circular economy approach, with the aim of optimizing resource use, reducing waste, and strengthening operational sustainability. The study was conducted using a mixed-methods methodology, combining qualitative and quantitative approaches, supported by bibliographic-documentary and field research. The documentary research made it possible to compile relevant technical and conceptual information on circular economy, prioritizing academic sources such as books, scientific articles, theses, and studies validated by experts in the field. In parallel, field research was carried out in the production area of the company CONSUTEX, focusing on its highest-demand product, the MINBOLL boxer. Data collection was conducted through direct observation of the production process, the use of record sheets, and time studies, which enabled the calculation of standard times for each operation. The results showed that the sewing area represents the main bottleneck in the system, with a standard time of 187.48 seconds per unit and an approximate production capacity of 154 garments per day. In addition, several sources of waste were identified, mainly related to outsourced cutting control, inefficient use of materials, stitch testing, sewing defects, and rework processes. Based on this diagnosis, circular economy criteria applicable to the textile sector were established, aimed at preserving natural capital, optimizing resources, and valorizing waste. These criteria supported the development of a Procedures Manual that contributes to process standardization, operational efficiency, and long-term sustainability of the production system.Item Metodología Lean Manufacturing en los procesos productivos de la empresa Discoint(2025-07) Paucar Alomoto Edison Javier; Escobar Naranjo Juan Camilo; Universidad Técnica de Ambato. Carrera de Ingeniería IndustrialThis research project focused on analyzing and reducing Lean waste in the production processes of DISCOINT, a food machinery manufacturing company. Relevant inefficiencies were identified in critical areas such as Design and Development, Production and Assembly, which affected the timely delivery of products and increased operating costs. To address this problem, the 1-liter oil sleeving machine was selected as the reference product, identified through an ABC analysis of sales for the year 2024 as the one with the highest demand. A detailed survey of the processes was carried out, applying the back-to-zero timing method to measure times and build the Current Value Flow Map, in order to visualize the activities that do not add value. The results showed that the most frequent wastes correspond to waiting times with 46% of occurrence, rework with 31% and unnecessary movements with 8%, totaling 14 hours and 41 unproductive minutes. The main causes of these inefficiencies were identified through Ishikawa diagrams, showing delays in the delivery of materials, multiple revisions of drawings and disorder in the work environment. Through a technical literature review using the PRISMA methodology, Lean Manufacturing tools adapted to the company's context were selected: KANBAN to reduce waiting times through visual control of inputs, process standardization to reduce rework by establishing clear and documented methods, and 5S to eliminate unnecessary movements by organizing and cleaning the work area. To facilitate their application, specific manuals were prepared for each tool, aligned with DISCOINT's operational needs, with the aim of optimizing processes, improving coordination between areas and fostering a culture of continuous improvement oriented towards efficiency and quality.Item Gestión del riesgo operacional en los procesos de la empresa Asoserlirio(2025-07) Gamboa Torres Johan Sebastian; Ortiz Guerrero Daysi Margarita; Universidad Técnica de Ambato. Carrera de Ingeniería IndustrialThis research aimed to develop an operational risk management approach for the processes of ASOSERLIRIO, a company dedicated to providing cleaning services to public and private entities. To achieve this, a diagnostic of the current situation was carried out through interviews, direct observation, and a verification checklist focused on key aspects such as documentation, personnel, inputs, operational dynamics, results, and equipment usage. The results of this evaluation revealed significant deficiencies, including the absence of formally established procedures, insufficient trained personnel, lack of defined operational frequencies, and the use of unreliable information, all of which significantly increase exposure to operational risk. To analyze these risks, the FMEA technique (Failure Modes and Effects Analysis) was selected through a weighted criteria comparison with other methodologies. This technique allowed for prioritization of failure modes based on severity, frequency of occurrence, and detection capability, identifying the most critical processes as those related to service execution, supply management, and human talent management. As a proposed solution, process and procedure manuals were developed to standardize activities, define responsibilities, and incorporate evaluation indicators. These documents aim to enhance traceability, optimize resources, and establish a foundation for continuous improvement. This work not only benefits the operational performance of ASOSERLIRIO but also contributes theoretically and methodologically to the study of operational risk management in service organizations, a field that has been scarcely explored in the Ecuadorian context.Item Estudio Lean six sigma en los procesos de corte y confección de la empresa D'Christian – Maryuri(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial, 2025) Lascano Guzmán Isaac Josué; Padilla Medina Angel Rodrigo; Morales Perrazo Luis AlbertoThis study aims to develop a Lean Six Sigma approach in the cutting and sewing processes of D'CHRISTIAN – MARYURI, focusing on the production of women’s underwear, SKU 425. The DMAIC methodology is applied alongside statistical tools such as X-R and U control charts, time studies, Takt Time, Value Stream Mapping, and Six Sigma metrics. Data collection spans four months, employing contour measurement, defect counting, and the assessment of waste and transportation. Results highlight significant process capability issues, with Cp values of 0.53 for size 40 and 0.52 for size 44, indicating the system’s inability to consistently meet quality specifications. Variability stems from a lack of standardized procedures, operational fluctuations, and machinery inconsistencies. The analysis identifies improvement opportunities in waste reduction and workflow optimization. This study establishes a robust baseline for corrective actions aimed at enhancing productivity, reducing defects, and ensuring conformity to quality specifications. The findings lay the groundwork for process standardization and achieving a more efficient and competitive manufacturing environment.Item Gestión por procesos en la empresa “Fortecalza New Generation”(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial, 2025-02) Robalino Tibán Johanna Katherine; Tubón Núñez Edith ElenaFORTECALZA NEW GENERATION, with more than 20 decades in the market, specializes in the manufacture of footwear, standing out for its innovation and wide variety of models. The objective of this research was to document and standardize the production process, in order to establish uniform procedures that contribute to the optimization and efficient workflow. The research begins by gathering information through an interview with the manager, identifying the current situation, where it is evident that the company does not have a process management model, lacks documented information and indicators, in addition, the activities are executed based on the experience or capabilities of the operator which leads to the inefficient execution of these. Once the context of the organization was identified, an ABC analysis was necessary to define the footwear model on which the project was focused. Consequently, the processes involved in footwear manufacturing were identified and classified into strategic, key and support processes, which were structured in a process map and characterized in the corresponding files. For a clear and structured visual representation of the flow of activities, analytical and synoptic flowcharts were developed that contributed to the standardization of the processes, and indicators were established to measure the performance of the production processes. Finally, the processes and procedures manual is designed, which includes key standardized information, providing the interested parties with the necessary guidelines for the correct execution of their activities, control and organization of the processes.Item Gestión por procesos para la Fábrica de Chocolates Pazmiño(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial, 2024-08) Pazmiño Solis, Marcos Nicolás; Tubón Núñez, Edith ElenaThe Pazmiño Chocolate Factory is a company dedicated to the production of artisanal chocolate bars, it has a history of more than 100 years in the market, the processes for the production of chocolate have improved in recent years thanks to the implementation of new machinery, however, it does not have records, documents and instructions about the procedures and activities that are carried out in each operational process, In addition, the factory does not have a process management system that allows the fulfillment of organizational objectives, the standardization of processes, the assignment of roles and managers in each area. An initial diagnosis was carried out through direct observation, interview and surveys, where information was obtained on the processes, machinery, activities and areas or departments that the factory has, which allowed the identification of the problem and determine the operational activities, in this way the processes were classified as operational, strategic and supportive, in addition the process map and their characterization were developed. allowing the identification of inputs, processes, outputs, resources and those responsible. For the standardization of the operational processes, analytical and synoptic cursograms were carried out, where the operations, storage, waiting and inspections in the production of chocolate were identified, in addition it was possible to identify the operations that require more time and the distances traveled, the indicators were established for each operational process, in order to evaluate, monitor and control the performance of each one. Finally, a manual of procedures for operational processes based on process management was proposed, the manual was designed as a guide for workers, it has indicators and records to determine the fulfillment of organizational objectives.Item Estudio del trabajo en los procesos productivos de la empresa de fabricación de suelas “Multinyec”(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial, 2024-08) López López, Jessica Liliana; Ortiz Guerrero, Daysi MargaritaThis thesis investigates the work processes within the production operations of "MULTINYEC," a company specializing in sole manufacturing. The research emphasizes the necessity of examining work activities to enhance operational efficiency, reduce manufacturing times, and increase overall productivity. Through a meticulous analysis of critical operations in areas such as milling, injection molding, and packaging, unnecessary activities were identified and eliminated, and time standards to produce sports soles were established. The study employed a comprehensive approach to gather detailed and accurate information, utilizing various data collection techniques. These included direct observation within the company’s facilities, informal interviews with production staff, and an immersive investigation into the workplace environment. Additionally, the research involved a thorough review of documents related to work methods and time-motion studies, coupled with interviews to collect both qualitative and quantitative data. The documentation of activities in each process area was achieved with flowcharts, synoptic and analytical cursograms, man-machine diagrams, and the application of the SMED (Single-Minute Exchange of Die) methodology. The current production methods were rigorously analyzed through the technique of detailed questioning, leading to the identification of potential improvements by eliminating, combining, or simplifying operations. As a result of these efforts, the study demonstrated a notable enhancement in the company's productivity, with a 6.24% increase compared to the existing production methods. This thesis not only provides a detailed examination of the work processes at MULTINYEC but also presents actionable insights and recommendations for further efficiency improvements.
