    Plan de negocios para la producción y comercialización de un producto destilado a partir de dulce de cabuya (Agave americana var) en la provincia de Cotopaxi

    The Cabuya Sweet or Misque is a traditional beverage from Cotopaxi; therefore, it is necessary to industrialize it into a distilled product. This work starts from a descriptive study, whose objective was to design a business plan that allows for the production and commercialization of the distilled product. The business plan includes market, technical, administrative, and financial evaluation studies. By studying the market, unmet demand was determined; the target market is aimed at consumers aged between 18 and 45 years. The technical study complied with the characterization of the raw material, obtaining a value greater than 14 degrees Brix; the pH obtained was between five and six; for fermentation, a total of six degrees Brix and a pH of five to four were obtained, in addition to having 5 percent alcohol. The analysis of the final product obtained ten degrees Brix, a pH of four, and reached 38 percent alcohol; these analyses were performed based on the INEN 1837 technical standard. The administrative study was structured, serving as the basis for the operationalization of the company. Finally, a Net Present Value (NPV) of $2,380 was determined with an Internal Rate of Return (IRR) of 37 percent, and the capital recovery time is around two years and three months; therefore, it is concluded that the project is financially profitable in the long term.

    This project allowed to determine the feasibility for the creation of the Lácteos Zapata microenterprise, for the production of milk kefir with blackberry jam in the canton of Saquisilí, which consists of a market, technical, organizational and financial study. The market study allowed to determine the purchase intention and consumption trends of potential consumers in the urban area of the Saquisilí and Latacunga canton. In the technical study, the technology for the production of a product of good sensory quality was selected, as well as the equipment, inputs and utensils for the production and a plant design elaborated with criteria of Good Manufacturing Practices. Through the organizational study, the mission, vision, values and policies of the microenterprise and the most appropriate organization chart were established, based on which the functions and professional profile of the personnel were specified. Finally, with the financial study, the investment that needs to be made for its implementation and financial indicators such as the Net Present Value (VAN), Internal Rate of Return (IRR), Investment Recovery Period (PRI), Profitability on the Investment (ROI) and Breakeven Point (PE).

    Estudio de factibilidad para la creación de una microempresa, dedicada a la elaboración de cerveza artesanal de fermentación alta, saborizada con café orgánico (Coffea arabica) y envasado con Carbonatación forzada, en el cantón Quito, provincia de Pichincha - Ecuador

    This feasibility project for the implementation of a microenterprise, dedicated to the elaboration of high fermentation artisan beer, flavored with organic coffee (Coffea arabica) and bottled with forced carbonation in the Quito canton, Pichincha province, was based on the realization of a market, technical, organizational and financial study. In the market analysis, the supply and demand were identified based on the surveys applied to a population of the city of Quito with an age range of 18 to 64 years, which indicated interest in the product. The best developed formulation contains 15 percent Arabica coffee infusion and the product complies with the physicochemical and microbiological parameters established by INEN 2262. The brewery will be located in the city of Quito and will have qualified personnel to allow adequate production. Finally, the economic study will extend that an initial investment of USD 154,251.29 is required and with indicators of NET Present Value (VAN) of USD 214,833.87, with an Internal Rate of Return (IRR) of a percentage of 30 percent, a payback period (PRI) of 3.61 years and a return on investment (ROI) of 382 percent.

    Proyecto de factibilidad para la creación de una microempresa para la producción de buñuelos de horno en la ciudad de Pelileo, provincia de Tungurahua

    The present feasibility project made it possible to know the feasibility of the creation of DELIANA, a microenterprise in charge of making oven fritters, with a traditional recipe, in the city of Pelileo province of Tungurahua, carrying out four fundamental analyses, the market, technical, organizational and financial study. The market study made it possible to know if potential consumers are interested in the acquisition of oven fritters, determining a favorable reception of the product in the city of Ambato. Through the technical study, the best formulation for the production of oven fritters was determined by incorporating a preservative, without affecting the traditional flavor of them, the equipment was determined, the number of necessary operators, for a daily production of 900 containers of the product, the most suitable packaging and label, as well as the location of the microenterprise and design of the plant considering criteria of Good Manufacturing Practices. In the organizational structure, the identity of the DELIANA company, the business philosophy, the hierarchical order and the functions of each of the collaborators were established, which will be fundamental for the proper functioning of the microenterprise. Finally, the financial study was carried out in which the investment necessary for the creation of the microenterprise, the retail price, the equilibrium point and financial indicators such as Net Current Value, Internal Rate of Return, Investment Recovery Period, Return on Investment and Profitability were determined.

    This business plan is carried out in order to know if the implementation of an omega 3-enriched aflanado yogurt processing plant in the Ambato canton, on Tungurahua province it is feasible and viable through the application of market, organizational, technical and financial studies. This project seeks to provide to provide the consumer with a product that incorporates nutritional and functional characteristics that contribute to the well-being of potential customers. Through a market study, the consumer profile, habits and trends of consumption were known consumption, obtaining a positive reception of the product. The application of so-called 4P's was also proposed, with the intention of satisfying the public, selling more and achieving the goals proposed by the microenterprise. Through the organizational study the company Galacteos, designed of the comercial brand that was Yogurt Della Vita, organizational structure with its respective responsibilities, mission, vision, values and policies under which the microenterprise will act. Through the technical study, the location of the processing plant of aflanado yogurt was established, the operational capacity that is 750 units per day, in addition to the formulation most accepted by the consumer, inputs and machinery necessary for production and how these teams will be located throughout a plant layout. Finally, an economic analysis was carried out in a period of 5 years through the application of financial indicators such as VAN, TIR, PRI, ROI and Break-Even point, which indicated the feasibility of carrying out this project.

    Elaboración de un proyecto de factibilidad para la instalación de una microempresa artesanal de trufas de chocolate veganas enriquecidas con amaranto, quinua y semillas de sambo en la ciudad de Ambato

    Vegan chocolate truffles enriched with quinoa, amaranth and sambo seeds is a nutritious, gluten-free and innovative product that delights the consumer's palate. Therefore, the present project was developed in order to know the feasibility of installing a microenterprise producing this type of truffles in the city of Ambato, for which the market, corporate, technical and financial analysis was carried out. In the market study, the general and specific environment of the chocolate derivatives sector was analyzed, as well as the purchase intention, current consumption trends and preference of the target public. In the corporate study, the organizational structure was established for the proper functioning of the artisan microenterprise Chocolatería Carrillo and its mission, vision, values and policies were also determined. On the other hand, in the technical study, the place where the plant will be installed, which is in La Merced parish, was selected due to the benefits it brings to the microenterprise, in addition, the daily production capacity was established, which ensures the profitability of the business, the engineering project, label and plant design. Finally, through the financial study, the profitability and economic viability of the microenterprise was defined in a period of 5 years through the use of financial indicators such as the internal rate of return (IRR), equilibrium point (PE), recovery period of investment (PRI), net present value (VAN) and return on investment (ROI).

    Proyecto de factibilidad para la implementación de una microempresa productora de yogurt bebible saborizado con pulpa de mora en la ciudad de Latacunga

    The present project allows us to determine the feasibility of implementing a micro-enterprise to produce flavored drinkable yogurt with blackberry pulp in the Latacunga canton, through a feasibility study based on four study parameters: market analysis, technical study, administrative-organizational study, and financial study. The objective of the project is to introduce to the commercial market a line of dairy products such as yogurt drinks flavored with fruit pulp as an option to reduce the use of artificial flavorings and colorings that are used as chemical additives that can be harmful to the consumer's health because they cause side effects. The consumption of the product tries to be included in the target market as a strategy that is focused on the nutrition of the buyer, through the acquisition and introduction of yogurt to their daily diet. The market study determined the preferences and forms of consumption of the selected segment. The technical study identified the production capacity, process technology, and distribution of the plant, which is in the Latacunga canton, parish of Ignacio Flores. The administrative study established a hierarchical organizational structure with a solid business philosophy, consolidating Lácteos Tapia S.A. as a microenterprise dedicated to the production of quality dairy products. Finally, the economic analysis determined the feasibility and profitability of the project by applying a financial matrix where financial indicators such as VAN, PRI, TIR, ROI and break-even point (BEP) were obtained over a 5-year period.

    YOGUVID yogurt enriched with collagen is an innovative product that generates nutritional contributions and health benefits for the consumer; this project allowed determining the feasibility for the implementation of the microenterprise Lácteos Moposita to produce yogurt enriched with collagen in the city of Ambato, which has four levels of study such as the organizational, market, technical and financial study. The organizational study made it possible to establish the personnel, hierarchy and specific functions of the collaborators that will be used for the operation of the microenterprise, as well as the mission, vision, values and policies that characterize it. The market study revealed the needs and preferences of the potential consumer, determining that the innovative product is of interest to future customers in the urban sector of the city of Ambato. The technical study selected the equipment, utensils and inputs for the production of yogurt, and also established the daily production of product for the microenterprise to ensure its profitability and the yogurt production plant was located in the parish of Cunchibamba, due to the benefits it provides to the business. Finally, the financial study made it possible to determine the economic profitability for the operation of the microenterprise Lácteos Moposita over a period of five years, which was demonstrated through the results expressed in financial indicators such as Net Present Value (NPV), Internal Rate of Return on Investment (IRR), Investment Recovery Period (IRP) and Return on Investment (ROI).

    Proyecto de factibilidad para la implementación de una microempresa de chorizo picante ahumado en la ciudad de Ambato

    The present project allows to know if it is feasible to implement a spicy smoked sausage microenterprise in the city of Ambato province of Tungurahua, for these four key bases are needed: market study, project engineering, corporate structure, and analysis. financial. The purpose of the project is to offer a spicy smoked sausage to the market, which has chili in its formulation, which together with the smoked one, gives distinctive organoleptic characteristics to the product, and will act as conservation agents. Through a corporate study, the administrative requirements of the undertaking called Paysandú sausages. In the engineering of the project, the technology for the elaboration of sausage was applied, selecting materials, equipment and supplies, the productive capacity for an adequate functioning of the microenterprise was determined, a sensory analysis was applied for the election of the best formulation and in the best treatment (30 percent fat and 20 percent chili), a proximal and microbiological analysis was performed. Through a financial study, the viability and profitability of the project for its implementation was determined, based on financial indicators which were the Net Present Value of 29.717,69 dollars, Internal Rate of Return 67 percent, Break-even point of 2614 units/month and the Return on Investment with 159 percent, which determined that the microenterprise is profitable and can be implemented.

    Nutritional gummies are a type of healthy candy due to their content of inulin (fiber), vitamin C and E; ingredients that provide nutritional benefits for consumers. For this reason, the present project allows to know the feasibility for the installation of a nutritional gummies microenterprise in the Salcedo canton, applying criteria that are based on the analysis of market study, administrative study, technical study and financial evaluation. In the market study, the macro and mesoenvironment of the gummies business was analyzed, the market segment was established, to which surveys were applied, to know the current trends and preferences of consumption. In the administrative study, it was determined that the Alimentaria Barreros microenterprise will function under a mission, vision, values, policies and an organization chart structured in a hierarchical manner, according to the positions of the personnel, the functions and the professional profile were specified. In the technical study, the location was selected, by means of the quantitative point method, the size, project engineering, proximal and sensory analysis, brand design, label and packaging, plant design and inventory policy were determined. Finally, in the financial study, for the initial investment, pre-operative expenses, working capital, short-, medium-, and long-term assets were considered, and the profitability of the microenterprise was evaluated through financial indicators, such as the Net Present Value. (VAN), Internal Rate of Return (IRR), Investment Recovery Period (PRI), Return on Investment (ROI) and Break-Even Point (PE).
