Item Evaluación físico-química y microbiológica en el desempeño de las áreas de producción de productos naturales y cosméticos en el laboratorio NEOFÁRMACO del Ecuador Cía. Carrera de Biotecnología, 2022-09) Mosquera Sánchez, Marco Antonio; Tubón Usca, Irvin RicardoIn this study, was evaluated the physicochemical and microbiological performance of the production areas of cosmetics and natural products at Laboratorio Neofármaco del Ecuador, located in the city of Ambato. Pharmaceutical laboratories require legal authorization to produce medicines in general, and they must comply with certain regulations such as good manufacturing practices (GMP) established by national and international health regulatory authorities, ensuring production processes and product quality. For performance evaluation, physicochemical tests were carried out to determine the temperature and humidity, the concentration of particles in the air with their respective process capability indexes (Cp), differential pressure, velocity air and exchange air rates. Then, a microbiological environmental monitoring of the air was carried out by means of different samplings such as active sampling in the area, active sampling of the diffuser, and passive sampling. On the other hand, for microbiological evaluation of surfaces, the swab sampling method was applied, where a microbiological count of total aerobes, molds-yeasts, and Salmonella spp was performed. To conclude, it was demonstrated that both areas comply with all the established specifications and maintain consistent results, which ensures the safety in manufacture of non-sterile pharmaceutical products.Item Elaboración de un manual para la creación e implementación del Departamento de Investigación y Desarrollo de nuevos productos en la empresa INALPEV Cía. Carrera de Ingeniería en Alimentos, 2020-09) Díaz Párraga, Gabriela Belén; Tapia Vasco, Luis JavierThe present degree work under the Systematization of Practical Experiences of Research and / or Intervention modality carried out in the fruit pulp company INALPEV Cía. Ltda., from the Tisaleo canton, has the design and implementation of a Manual for Research and Development of new products as a guideline to establish the Research and Development department, with a view to diversification, positioning and innovation. The methodology proposes adapting the structure for the design and development of new products with the requirements established by the ISO 9001: 2015 Standard and the Quality Management System implemented in the INALPEV company. The initial evaluation of the Quality Management System and the review of the requirements of the regulations, allowed to establish the scope of the documentation of the Research and Development area. The structuring of the documentation of the Research and Development department includes operations, resources, responsibilities, controls and follow-ups for the design and development of new products. The objective of the present research was to determine the amount of carbon footprint by reaches that emits ground Terminal of the city of Latacunga and the implementation of an environmental management plan that will help to reduce GHG emissions from the standard ISO 14064 and the IPCC guidelines, identifying scope 3 representing the Terminal road haulage to present greater emission of carbon footprint, which reached the 25723,545t CO2 eq of one total of 25725,394t CO2 eq. Facultad de Ciencia e Ingeniería en Alimentos. Carrera de Ingeniería en Alimentos., 2017-12) Jácome Lara, Bernarda Alejandra; Baquero Icaza, Paulo SantiagoAn initial diagnosis was applied to Industria de Alimentos Andinos (INDAN), where the following aspects were assessed: Level of compliance with the requirements established by the International Standard ISO 22000:2005 (22.65 percent); Plan of hazards analysis and critical control points (HACCP)(47.56 percent), in this first stage a general compliance percentage of 35,11 percent was obtained. With the information collected, the safety policy was prepared, the objectives and scope of this project, subsequently, the food safety equipment was formed, accounted for the continuous improvement of the Food Safety Management system (SGIA, in Spanish). The Operational Prerequisites Program (PRP), as well as the drafting of the handbook for Hazard Analysis and Critical Control points (HACCP), in which critical safety limits were established and the measures used to control Hazards that may occur during the manufacturing process of canned fruit. Finally, an internal audit was carried out where the efficiency of the designed system was assessed, obtaining a 90,60 percent compliance according to the requirements of the international standard used in this project. The model SGIA designed for INDAN, based on the ISO 22000:2005 standard, will allow the company to control the hazards of production that may threaten the safety of its products, as well as; Reduce production costs by eliminating non-compliant product and finally granting a competitive entrepreneurial level.Item Modelo de gestión de calidad para la producción de Mora de Castilla de la Asociación de Productores Agropecuarios Santa Lucía La Libertad(Universidad Técnica de Ambaro. Maestría en Gestión de la Producción Agroindustrial, 2017-11) Enríquez Pico, Juan Marcelo; Salazar Garcés, Diego ManoloThe research work is related to the application of the Quality Management Model for the production of Mora de Castilla, for which reason, the design of the quality management system is taken as reference to the International Standard ISO 22000: 2005, where the representatives and producers of the Agricultural Association Santa Lucia La Libertad will maintain order within the production plant and the cultivation areas, besides, it is important the use of this methodology that allows the commercialization of the product to international segments. The diagnosis or survey of the baseline was taken as reference to the International Standard ISO 9001: 2008, which allows the evaluation of quality management systems through the use of Check List for the production plant and partners of the association, the result framework 17.35% (production plant) and 21.47% (partners) of compliance, which means that it is necessary to apply rapid action measures, this is the training related to the topic of Good Manufacturing Practices, which allowed structuring the document or general manual that allows the fulfillment of the 50% test like production, soil management, material, risks, hygiene of the plots and fertilizers.Item Diseño de un Plan para mejorar la calidad del agua embotellada de la Empresa Municipal de Agua potable y Alcantarillado de Guaranda(Universidad Técnica de Ambaro. Maestría en Gestión de la Producción Agroindustrial, 2017-11) Solórzano Saltos, Edwin Álvaro; Córdova Suárez, Manolo AlexanderThe research was developed in the Municipal Water and Sewerage Company of Guaranda (EMAPAG), aimed at designing a plan to improve the quality of bottled water considering the requirements established in ISO 10005: 2005. The initial diagnosis identified a 22 % compliance with the requirements of the quality plan. Through a Pareto diagram an order of priorities was assigned to the identified problems within which the planning, production and processes related to the client stand out. A survey was applied to clients and workers of the company to know the perception they have about internal aspects linked to production, establishing that the company does not have protocols implemented for the development of the activities involved in the water bottling process, as well as communication and feedback with the client. The quality plan designed for the company specifies what procedures and resources should be applied, who should apply them and when they should be applied. At the end of the research phase, the requirements verification sheet of ISO 10005: 2005 was applied again, reaching 84% compliance, which demonstrates the applicability and efficiency of the plan.Item Elaboración de un mapa de ruido ambiental para la Unidad Desconcentrada de Terminales, Área de Transferencia América y Cashapamba de la ciudad de Ambato, siguiendo los lineamientos de la norma ISO 1996-2:2007 en convenio con el GAD Municipaldad de Ambato(Universidad Técnica de Ambato. Carrera de Ingeniería Bioquímica, 2017-10) Morales Mariño, Johanna Vanessa; Vargas López, José HomeroThe present work consisted in the monitoring of sound pressure levels within the 3 terrestrial terminals in the city of Ambato in order to know the generated environmental noise and its graphical representation through a Geographic Information System ArcGIS 10.3. In order to establish the points of measurement, important aspects were taken into account such as the development in the vehicular traffic, area and distribution of bus platforms, inputs and outputs of each terminal. It was established the division by zones in the Desconcentrated Terminal Unit with a total of 72 points, 26 points for the America’s Transfer Area and 29 points in the Cashapamba’s Transfer Area. The guidelines described in ISO 1996-2: 2007 for the determination of environmental noise levels were applied and these results were compared with the Unified Text of Secondary Legislation of the Ministry of the Environment (TULSMA) that according to the land use, the analyzed areas are considered as mixed commercial zones with an equivalent sound pressure level of 65 decibels (dB) at the corresponding time of 6:00 am. - 20:00 pm, obtaining higher and lower values in relation to said value. Facultad de Ciencia e Ingeniería en Alimentos. Maestría en Gestión de la Producción Agroindustrial, 2017-09) Hidalgo Guerrero, Irene Elizabeth; Espín Guerrero, Víctor RodrigoEsta investigación determinó la relación entre las variables Sistema de Gestión de Calidad y productividad en la Asociación Fuerza Innovadora. El diagnóstico según la norma ISO 9001:2008, arrojó un nivel de cumplimiento general de 5%. Realidad que ha afectado el desarrollo de los procesos de elaboración de queso fresco y mozzarella, detectándose como principales problemas en el proceso, la contaminación por parte del personal e incumplimiento de los parámetros de calidad en leche cruda. La implementación de procedimientos según los requerimientos de la norma ISO 9001:2008 y controles en el área de producción se evidenció en los resultados logrados. El análisis de E. coli mostró una mejora significativa cumpliendo con lo exigido en la norma NTE INEN 1528:2012, en comparación con el método tradicional. Los indicadores de gestión de la productividad presentaron avances: la calidad de la producción se mantuvo óptima con un 99,8% de cumplimiento, disminuyó el margen de desperdicios de producto terminado con 31% en queso fresco y 70% en queso mozzarella. Se definió una eficiencia técnica de 62% y un nivel de mantenimiento nulo, pues no se contó con el apoyo de la directiva de la asociación en estos aspectos.
