Item Sistema de gestión de calidad en base a NTE-ISO/IEC 17025:2006 aplicado al laboratorio de análisis de alimentos de la Prefectura de Bolívar en la calidad en el servicio(Universidad Técnica de Ambaro. Maestría en Gestión de la Producción Agroindustrial, 2017-05) Aroca Pinos, Erika Steffania; Sánchez Vélez, Silvia JannethIn order to develop the indispensable procedures for the implementation of a quality management system in the Bolivar Prefectural Food Analysis Laboratory, we worked with two tools that allowed us to know its initial situation, the first related to a diagnosis of Compliance with general requirements for the competence of testing and calibration laboratories based on the NTE-INEN ISO / IEC 17025: 2006 standard, which consists of two sections; Management requirements and technical requirements, the first being the object of study in which it achieved a 12% compliance. The second tool that allowed us to measure the quality of customer service through the comparison between what was expected and what was received was the Servqual survey, in which satisfaction results were obtained around 80%, evaluating 5 elements; Tangible, reliability, responsiveness, security and empathy. On the basis of the results obtained, a quality plan was executed, which allowed to organize the internal operations and generate the necessary documentation to demonstrate the implementation of the quality management system. Once the Quality Management System has been implemented, it is established the need to work on the technical processes in order to start with the procedures for the accreditation of the laboratory, which is why it is proposed to validate the microbiological methods used to Order to guarantee the results issued.Item Elaboración de un plan de limpieza y sanitización para mejorar la calidad de productos pesqueros comercializados en el local PROMAR ubicado en la ciudad de Ambato(Universidad Técnica de Ambato. Diplomado Superior en Auditoría y Aseguramiento de la Calidad para el Sector Alimenticio, 2013-05) Córdova Guambo, Inés Virginia; Álvarez Calvache, Fernando CayetanoThe present research is aimed at improving the quality of fishery products that are sold in the Seafood Shopping CenterPROMAR, that establishment has no standardized procedures to maintain and improve the hygienic conditions of facilities, personnel, equipment and utensils, contributing cross-contamination with the products sold. Under this issue, and considering the power law and good living in the country, has been appropriate to develop a plan for cleaning and sanitizing, so the manual is designed to PROMAR. This work included the identification of the areas, equipments and utensils that the company. Also, it was classified the kind of dirt for being eliminated and according to this, they were suggested some cleaning and disinfectant products. Then, Standard Operational Procedures were redacted, along with control formats, verification formats and corrective actions formats, all part of the basic documents of the cleaning and disinfection handbook. Maestría en Producción más Limpia., 2015) Palma Lizano, Kléber Alberto; Zambrano Abril, Edwar Einsten LeonardoThe purpose of this research is to generate a proposal for the implementation of a quality management system and safety BASC for the foreign trade sector specifically in logistics operations of transport, handling and storage; providing an effective solution for managing risks within a specific methodology and techniques to ensure safe trade for the company United Parcel Service Ecuador, the organization which took as its own this management model, will become more competitive in the domestic market and global levels, accessing new business opportunities, which probably will result in economic growth of the company, something that benefits not only the organization if not the valuable human resources working in the company and the Ecuadorian society, as United Parcel Service is a company with global coverage will be able to transport with more security and success Ecuadorian products.Item Las prácticas agrícolas de la Asociación Flores y Frutas de Huachi Grande y su incidencia en la calidad y productividad de fresas (fragaria vesca) variedad albión(2014) Escobar López, Rubí MagnoliaEn el presente trabajo de investigación se realizó una evaluación inicial de Buenas Prácticas Agrícolas (BPA) a 8 huertos, 7 huertos pertenecen a la Asociación y un huerto es tomado como control, el mayor porcentaje de cumplimiento de las BPA tuvieron los huertos H-08 con el 60,42% y el H-07 con el 46,52%. Las fresas estudiadas tuvieron los siguientes atributos sensoriales: color rojo intenso, olor característico a fresa y sabor dulce; también se determinó las características físico químicas y microbiológicas que se encuentran dentro de especificaciones, los huertos H-08 y H-07 contienen 0,0004 mg/kg de residuos organoclorados totales valor que se encuentran dentro de los límites establecidos por la FAO/OMS.
