This project addresses the valorization of wastewater generated from the debittering process of Lupinus mutabilis (chocho), a commonly discarded byproduct that contains bioactive compounds with antimicrobial potential. Given the growing environmental concern regarding agro-industrial waste management and the search for sustainable alternatives to microbial control, this research aims to utilize the alkaloids present in this effluent as antimicrobial agents, contributing to both biotechnological development and environmental impact reduction. The methodology involved collecting three samples of dried L. mutabilis seeds (5 lb each), which underwent hydration, boiling, and washing for five days. The resulting extracts were subjected to physicochemical characterization, and the alkaloid concentration was estimated by UV-Vis spectrophotometry using a calibration curve (R square = 0.9919). The absorbance values of the cooking-phase extracts were 0.338, 0.455, and 0.401, respectively. Subsequently, the antimicrobial activity of each extract was evaluated against Escherichia coli (bacterium) and Saccharomyces cerevisiae (yeast), showing growth inhibition at a concentration of 500 micrograms per mL. Preliminary results suggest that the alkaloids in debittering wastewater exhibit moderate antimicrobial activity, highlighting their potential for the development of natural products with pharmaceutical or agricultural applications. This study lays the groundwork for future research focused on the purification of active compounds and their large-scale application, proposing a sustainable strategy for agro-industrial waste management.

In the present study, the antimicrobial and anti-inflammatory activities of the dry total extract of red mangrove (Rhizophora mangle L), whose tests were carried out in vitro, were evaluated. The biological activities tested are possibly due to the polyphenols contained in this plant extract. The polyphenolic quantification of the powder extract was carried out by the Folin-Ciocalteu method giving a concentration of 338,31 more less 4,24 mgGAE per g. The antimicrobial activity was performed by disc-plate diffusion method, 5 pathogenic microorganisms were used, the results obtained indicated that the plant extract inhibits the microbial growth of Gram-positive bacteria, among them Listeria monocytogenes, Bacillus cereus and Staphylococcus aureus, while that for Gram-negative bacteria a positive test for inhibition of bacterial growth was not evident, among them Escherichia coli and Pseudomonas aeruginosa, as a positive control, Gentamicin was used at 500 μg per ml. For Gram-positive bacteria, the minimum inhibitory concentration (MIC) whose results were 11,23 mg per ml; 6,92 mg per ml and 5,63 mg per ml S. aureus, L. monocytogenes and B. cereus, respectively. The anti-inflammatory activity was evaluated on human erythrocytes, by means of the membrane stabilization method, where the percentage of the anti-inflammatory capacity was higher than the positive control (aspirin) in the concentrations of 1; 1.5 and 2 mg per ml whose results were 68,51 percent; 83,34 percent and 84,67 percent respectively, while the positive control gave a percentage of anti-inflammatory activity at the same concentrations of 54,75 percent; 64,75 percent and 74,49 percent.

The aim of this research was to study the antimicrobial activity of chitosan and ε-polylysine coatings on blackberries (Rubus glaucus Benth) inoculated with Escherichia coli, Salmonella enterica (103 cfu•g-1) and Botrytis cinerea (103 conidias•ml-1). The inoculated blackberries were stored at 6 ± 1 °C for 10 days and microbiological analyses were evaluated every two days. Maximum inhibition of E. coli growth with chitosan coating was 3,22 log cfu•g-1 and S. enterica was 3,24 log cfu•g-1 for ten days of evaluation while growth of B. cinerea was inhibited in day 8. Likewise, ε-polylysine coating inhibited S. enterica growth during ten days and, on days 8 and 10, it reduced also the proliferation of E. coli (2,88 and 3,22 log cfu•g-1, respectively) and B. cinerea. Blackberries’ acid pH enhanced both, pathogenic bacteria’s inhibition and growth of the mold B. cinerea. From this work, it was concluded that chitosan and ε-polylysine coatings have antibacterial and antifungal activity and that this activity was higher as the exposure time of the coating with the microorganisms was longer.

In the present study evaluated the antibacterial activity against Helicobacter pylori of dry extract polyphenols Rhizophora mangle L. obtained by spray drying. The aqueous extract at the bank level was obtained with vegetal material /water (MV /A) 1:20 relation and 1 hour than in the laboratory showed the best extraction yields of total soluble solids (SST) and polyphenols with 15.78 ± 0.14% and 5.67 ± 0.06% respectively. Spray drying of liquid extract showed a favorable yield of 91.45 ± 0.03%, the same as retained chemical properties of the extract in its powder form with a polyphenol concentration of 340.53 ± 1.50 mg GAE / g analogue content of aqueous extract of 346.46 ± 4.36 mg GAE / g. The moisture content of dried extract was maintained under the limit for dry products with 1.26 ± 0.16%, was evidenced by spectroscopy infrared presence of the characteristic functional groups of polyphenols such as alcohols, phenols and carboxylic acids and through infrared scanning microscopy showed the powder particles spherical shape with an average size of 2.94 ± 1.30 μm. La antibacterial activity was evaluated in vitro by agar dilution quantitative method to determine the minimum inhibitory concentration (MIC) compared to a positive control as clarithromycin. The minimum concentration dry extract of red mangrove that inhibited the growth of a non-resistant strain of Helicobacter pylori was 100 µg/mL, while for a resistant strain, the dry extract at a concentration of 800 µg/mL inhibited growth in 57,64 ± 1.16%, similar to the effect caused by control.
