    Plan de negocios para la producción y comercialización de un producto destilado a partir de dulce de cabuya (Agave americana var) en la provincia de Cotopaxi

    The Cabuya Sweet or Misque is a traditional beverage from Cotopaxi; therefore, it is necessary to industrialize it into a distilled product. This work starts from a descriptive study, whose objective was to design a business plan that allows for the production and commercialization of the distilled product. The business plan includes market, technical, administrative, and financial evaluation studies. By studying the market, unmet demand was determined; the target market is aimed at consumers aged between 18 and 45 years. The technical study complied with the characterization of the raw material, obtaining a value greater than 14 degrees Brix; the pH obtained was between five and six; for fermentation, a total of six degrees Brix and a pH of five to four were obtained, in addition to having 5 percent alcohol. The analysis of the final product obtained ten degrees Brix, a pH of four, and reached 38 percent alcohol; these analyses were performed based on the INEN 1837 technical standard. The administrative study was structured, serving as the basis for the operationalization of the company. Finally, a Net Present Value (NPV) of $2,380 was determined with an Internal Rate of Return (IRR) of 37 percent, and the capital recovery time is around two years and three months; therefore, it is concluded that the project is financially profitable in the long term.

    This business plan is carried out in order to know if the implementation of an omega 3-enriched aflanado yogurt processing plant in the Ambato canton, on Tungurahua province it is feasible and viable through the application of market, organizational, technical and financial studies. This project seeks to provide to provide the consumer with a product that incorporates nutritional and functional characteristics that contribute to the well-being of potential customers. Through a market study, the consumer profile, habits and trends of consumption were known consumption, obtaining a positive reception of the product. The application of so-called 4P's was also proposed, with the intention of satisfying the public, selling more and achieving the goals proposed by the microenterprise. Through the organizational study the company Galacteos, designed of the comercial brand that was Yogurt Della Vita, organizational structure with its respective responsibilities, mission, vision, values and policies under which the microenterprise will act. Through the technical study, the location of the processing plant of aflanado yogurt was established, the operational capacity that is 750 units per day, in addition to the formulation most accepted by the consumer, inputs and machinery necessary for production and how these teams will be located throughout a plant layout. Finally, an economic analysis was carried out in a period of 5 years through the application of financial indicators such as VAN, TIR, PRI, ROI and Break-Even point, which indicated the feasibility of carrying out this project.

    This business plan included a market study, a technical study, a corporate study and a financial study, which allowed determining the feasibility and viability of the implementation of a company that manufactures a cold infusion beverage based on organic panela in the province of Cotopaxi, Latacunga canton. The market study identified the potential demand and rivalry with competitors positioned in the market, to generate a greater attractiveness to the new product, the strategies of the 4Ps marketing mix were implemented. Through the technical study, inputs and outputs of raw materials and inputs were established, on the other hand, the equipment and machinery necessary for the production of the cold infusion drink in an industrial way were established, also the location, distribution of the plant (Layout) and the installed production capacity were established. Through the financial study, the total investments, cash flow and the financial indicators NPV, IRR, IRR, Equilibrium Point and the cost-benefit ratio were constructed, which demonstrated that the installation of the company that manufactures a cold infusion drink based on organic panela is viable.

    Traditionally, one of the star products of gastronomy in the Ecuadorian highlands are the dishes produced with guinea pigs, this has a lean and highly nutritious meat, due to which a large part of the meat-consuming market considers that it is a product that should be better marketed. In this project, a business plan is established that seeks to implement a suitable meat processing plant for the packaging of slaughtered guinea pigs, giving added value to the guinea pig carcass, such as marinating or precooking, in addition to lengthening the conservation time using techniques such as vacuum packaging and quick freezing. Associations and artisanal producers of guinea pigs will be the main suppliers of guinea pigs, thus working together with society. It is proposed to process 100 kilogram of guinea pigs per day, thus covering approximately 2 percent of the demand for it in the market. With an investment of 25,000 dollars, it is calculated that there would be a total recovery of the capital in approximately one year of work if the projected sales goals are met. The investment includes rental and adaptation of a processing plant, purchase of equipment that allows to meet the required production. The results of this business plan determine that the implementation of a guinea pig-based meat processing plant in the Cevallos canton is feasible.

    The research project was carried out in the city of Ambato where a market study was carried out to determine its feasibility. A survey designed on the QUALTRICS platform was applied in order to know the consumer's acceptance of the product. The market study established the pattern in the development of the project since it allowed knowing the competing brands that are sold in different supermarkets in the cities of Ambato and Riobamba, in addition, it determined that the most suitable supermarket to sell the compote is Mi Comisariato. The feasibility study seeks the use of sweet potato and pumpkin as a nutritional source and as an entrepreneurial alternative that promotes the economic development of the sector through the development of a quality product. The technical study determined the size of the project taking into account the location, plant design, product formulation, process flow, machinery and equipment, as well as production capacity, which will be approximately 96 units per day. The financial study established that the company requires an investment of 30,826 dollars from which 82,944 dollars will be obtained in total sales for the first year, generating an utility of 12,929.35 dollars. Finally, it was concluded that the project is feasible because the financial indicators VAN, TIR, PRI and Balance Point present positive values, for which it is considered that the initially required investment will be recovered in a short term.

    Modelo de negocio para la elaboración de jugos de fruta listos para el consumo en el cantón Ambato, provincia de Tungurahua

    The present study has the proposal of analyze a business model for the production of fruit juices ready for consumption in the canton of Ambato. The methodology used was a mixed method, quali-quantitative analysis criteria. Information analyzed was data over fruit juice market in Ecuador. On the other hand, data was collected though surveys for statistically analyzed. This data was obtained from the probable customers. In addition, different methods were used such as: the market study that allowed to identify the demand for the product, technical study that established the sector where the company and production process were located. Moreover, a corporate study and a financial study were applied to define policies and business organization, that allowed to establish fixed and variable costs and through these the calculation of financial indicators of investment viability. Results obtained show a supply of 18.750 units of fruit and vegetable juice per year. The product was designed in a presentation of 1 liter, using a Doypack containers and with the name of VegeFrut. Finally, the return on investment was determined, indexes such as Net Present Value (NPV) is USD 10.588,02, and the Return-on-Investment Rate (IRR) is 28 percent. for the return-on-investment period (PRI) is 34.82 months. Those values were calculated with respect to a cash flow of 5 years.

    Cheese is a product of greater mass consumption; therefore, its production generates significant economic income for the dairy sector, given the great variety of cheeses, each with its own physical, chemical and sensory characteristics. The objective of this project was to develop a business plan for the installation of a vacuum-packed sliced cheese processing company in the province of Tungurahua, based on the analysis of the corporate, market and business environment structure, technical, economic study financial, to determine the feasibility of its implementation. A corporate structure was proposed that allows an adequate management of the company, in relation to the market study, surveys were applied to a representative sample of the province of Tungurahua, the results of which showed that 97 percent of the respondents would buy this product. kind of product. In the technical study, the manufacturing technology of the sliced cheese, the physicochemical parameters of the raw material and the final product were considered; the location of the company was established, the production capacity that will be one hundred twenty-four thousand eight hundred units in the first year, working with the maximum capacity of the company and with a market share of 8.02 percent, and the distribution plant. Finally, in the economic study by determining financial indicators such as NPV, IRR, PRI, cost-benefit ratio and break-even point, it was determined that the company is profitable and viable, that is, its implementation would contribute to local development.

    Plan de negocios para la creación de una empresa dedicada a la elaboración de premezclas para helados de paila en la provincia de Tungurahua

    This business plan is composed by a market analysis, analysis of the production process and economic-financial analysis, which objective was the determination of the installation feasibility of a premix processing plant for “paila ice cream” in the province of Tungurahua. In the market analysis, the potential demand and competitors were identified in order to establish an adequate value proposal and mixed marketing strategies. The main sales channel will be the supermarket chain Mi Comisariato, setting an annual delivery of 49500 units of product. Through the analysis of the production process, the raw material, supplies and necessary equipment to prepare the premix were established, all of them with their associated costs. In addition, the location and setup of the plant was established. Finally, using the economic-financial analysis, NPV, IRR and IRP indices were calculated. The financial indicators showed that the installation of the premix processing plant for paila ice cream is viable.

    Plan de negocios para la implementación de una planta procesadora de néctar de guanábana en la provincia de Los Ríos

    This project has been developed with the objective of designing a business plan for the construction of a soursop nectar factory in Los Rios. In order to achieve this objective; market, technical, corporative and financial studies have been performed, each one with a specific aim. For instance, the market research analysed the customer and the acceptation of the product, helping to base the product´s demand. The technical study described the process of elaboration of the soursop nectar. The corporative study defined the most suitable type of company for the project. On the other hand, the economic study processed the collected data and link them to financial performance indicator through which the economic viability of the inversion was evaluated. As a result, a yearly demand of 133.153 litters of soursop nectar has been set. These would be commercialised in PET (polyethylene terephthalate) bottles of 500ml and under the commercial name of FRUKTYBANA. In addition, the formula of the product was developed taking into consideration the results of the sensorial analysis. In addition, a simple organisational structure was identified as the best way of administration for this project. Finally, the cost effectiveness of the project was evident, reaching a net present value (NPV) of 22.551,63 USD with an internal rate of return (IRR) of 23 percent. These values were calculated according to the cash flow values for a period of five years and establishing a payback period from the third year.
