Item Determinación de amilosa en presencia de amilopectina en almidón de arroz aplicando la espectroscopía derivada(2015-06) Carrasquero-Durán, Armando; Navas, Petra BeatrizThe spectrophotometric method based on the blue iodine complex has been widely used for the simple and fast determination of amylose. However, the presence of amylopectin, which also forms a complex with iodine, interferes to the amylose determination. To reduce this interference, the derivative spectroscopy (DS) was applied and the results were compared with the direct calibration (DC). Standard solutions of amylose with variable amounts of rice waxy starch as the source of amylopectin were prepared for the calibration and validation of mathematical models. Results showed that the direct amylose determination gave results that over estimate the true content of this polysaccharide. The DS reduced the interference of amylopectin, providing accurate results with very low errors. It was proposed the used of DS for the accurate, precise and simple determination of amylose in rice starch.
