The company CANAAN is dedicated to the manufacture of sneakers, characterized by being comfortable, versatile and suitable for daily use. Weekly, almost a thousand pairs of models are produced, which are created according to current trends, always on order from the warehouses that are throughout the country. Currently, the company does not have a previous study or documents on internal control issues. Therefore, a diagnosis of the company’s situation is started. For this, information is collected through a survey with contrasting and oriented questions to the control systems, inspections and checklists are carried out to guarantee the veracity of the answers and evaluate the available tools. Finally, an interview is conducted with the manager, who has a deep knowledge of all production processes. After analyzing the information collected, an SCI model adapted to the company’s needs is created, the roles and responsibilities of each area are defined, controls are established for process management, inventory, quality, safety, documentation and costs. Internal control not only seeks efficiency, but also protects the assets of the organization. This includes not only financial resources, but also data, intellectual property and the physical security of employees. With an initial analysis, the main changes within the process were identified, in order to provide a solution to the problems encountered, the management of a reference implementation proposal for lean manufacturing tools and continuous improvement methodologies in restaurant processes is proposed. . Through this research development, a process management model has been proposed for the fresh cheese production line at "Lácteos MENTUR" company. The process standardization absence and the employee’s frequent rotation have an impact on the work organization, resulting in production failures and loss of resources for the company. In this study, information was gathered on production process for fresh cheese manufacturing. Processes, subprocesses, and tasks carried out in all phases of production were identified, from reception to storage of the final product, and a process map was drawn up to get a better view of the current state of the organization. Based on these data, a procedures manual was proposed to establish an operations standardization for the fresh cheese production; this manual will not only help to improve the company's efficiency and productivity but will also be a guide for future studies and a tool to train and induct new employees with the purpose of optimizing resources and increasing productivity in general.Item Mejora de productividad basada en herramientas de Lean Manufacturing, para los procesos productivos de la empresa Curtiduría La PENÍNSULA(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial en Procesos de Automatización, 2023-03) Ojeda Altamirano, Diego Fabián; Tigre Ortega, Franklin GeovannyThis research work was carried out in the tannery "La Península", a company dedicated to the production of leather for footwear and clothing, with the aim of solving problems present in their production processes. Under an exhaustive initial analysis, several problems were identified, defining the most frequent and main ones in order to solve them and alleviate the critical areas of the process. A proposal was made to implement continuous improvement methodologies in the company in order to increase the company's productivity levels. For this investigation, improvement proposals were executed where the 5S methodology was implemented in all production areas, removing or transferring unnecessary elements from each area, thus recovering 22.9 m^2, reducing 4.71% of the time spent searching for tools, in addition, cleaning procedures were defined, cutting 25.78 minutes of cleaning time per week. With regard to the application of the SMED tool, the changeover time on the router was reduced from 10:25 minutes to 6:47 minutes and on the press machine it was reduced from 10:41 minutes to 7:47 minutes. After applying the two methodologies, an improvement in the leather manufacturing processes is observed, fulfilling the objective of increasing productivity levels.Item Redistribución de instalaciones para la mejora de la productividad en la planta de producción de la empresa Calzado Gusmar(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial en Procesos de Automatización, 2023-03) Játiva Amores, José Paúl; Naranjo Chiriboga, Israel ErnestoThe purpose of this research is to present a proposal for the physical redistribution of the facilities within the footwear company GUSMAR, this proposal allows to improve the productivity of the plant, removing useless distances and optimizing the available space. For the development of the project, three fundamental stages were considered: in the first stage, information was gathered on the current conditions of the production process; in the second stage, tools and methodologies for the distribution of facilities were used; and finally, the model of the current distribution and the proposed distribution were simulated using FlexSim software, in order to compare and select the alternative that would increase productivity. To generate the redistribution alternatives, the systematic distribution planning (SLP) method was used, then two alternatives were proposed and evaluated by means of the load-distance analysis, where it was determined that alternative 2 is optimal, since it reduces the distance traveled by the material by 26.75%, equivalent to 91,014.80 meters. And with the objective of reducing the longest duration times in the processes of trimming and assembly (bottleneck) where a flexible distribution in those workstations was carried out The distribution proposal was validated by analyzing the indicators obtained in the FlexSim software simulation of the entire footwear manufacturing line, where it was shown that this proposal generates an increase in productivity of 0.06%, or the same from 0.63 to 0.67 pairs/hour of work, or the increase from 625 pairs of shoes to 667, without generating an additional cost by redistributing the facilities of the GUSMAR footwear production plant.Item Estudio de tiempos y movimientos para mejorar la productividad en el proceso de elaboración de calzado casual de hombre en la empresa calzado KF Barona(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial en Procesos de Automatización, 2022-09) Martínez Soto, Bryan Alexander; Ortiz Sailema, Christian IsmaelThe purpose of this research work was improve the productivity of the company Calzado KF Barona, developing a study of times and movements in the process of manufacturing men's casual footwear. Through this study, time wastes and excessive transports have been identified due to a bad distribution of the production process and that is why a plant redistribution proposal has been made using the SLP methodology in order to establish a chain production that benefits the company by improving its productivity. Therefore, it is important to highlight the steps for the development of the research, which begins with the collection of information of the company and the current production processes within it, using tools such as flowcharts and flowcharts to recognize the activities that are performed in each area; it continues with the taking of times and movements of these activities within each area, identifying the bottleneck and excessive travel times that harm the company. From this, a plant redistribution is proposed through the SLP methodology that reduces these time wastes, organizing correctly the work areas and allowing a better flow of material. Reducing in more than 70% the transports, optimizing the processes, achieving an increase of the production in 88 pairs per month and raising the production capacity in 8.4%, which reflects the improvement of the productivity allowing gains of $880 per month in monetary values.Item Redistribución de instalaciones en la planta de producción de la empresa Ambasodas(Universidad Técnica de Ambato. Therefore, this research project seeks to formulate a strategic plan for operational management of Nutrición y Vida S.A. pasteurizing company improvement in order to define a course to follow to achieve the improvement objectives. Initially, the analysis of the current situation company is carried out through tools such as: internal and external evaluation matrix, competitive profile matrix and analysis of Porter's 5 forces, in which economic, social, political and economic factors are evaluated. Then, it is determined what type of strategies are adjusted to the developed evaluations that facilitate the strengthening of internal and external company operations, to finally develop operational plans with their respective performance indicators. Among the results, a weak company was found internally and externally, with conditions to improve both productively and financially, for which it became necessary to rethink the course, that the company should try to take advantage of each of its strengths and opportunities. The strategic plan is composed of 11 conservative and intensive strategies. Strategies are aimed at productive, administrative improvement and company expansion, which strengthen the adequate and fluid control of production chain. Finally, work is done on the operational plans and the balanced scorecard on which metrics are established for achievement of objectives in a continuous, periodic and directed manner, main expected goals are based on profits increase, greater participation in market and waste reduction to increase productivity.Item Estudio de tiempos y movimientos para la mejora de la productividad en la empresa Compubordado(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial en Procesos de Automatización, 2022-09) Gutierrez Veliz, Luis Roberto; Gavidia García, José LuisThe main objective of this research work is to improve productivity in the COMPUBODADO company, which is focused on reducing unproductive times through the use of time and movement study techniques. The applied methodology was of a qualitative-quantitative type due to the fact that data was collected through direct observation and interview, in addition to the processing time for each task, cycle time of the production process, number of operators, process flow and conditions. current production. On the other hand, secondary data, which included a brief history and organizational structure of the company and effective working hours. From the information obtained, several products that are made in the company were identified, so the ABC classification method was applied, where it is concluded that the product to be analyzed is the polo shirt because it is the one with the highest demand and valorization. for the company. Activity and analysis diagrams were used for each process, as well as time and movement study formats, in the measurement of the work it was obtained as a result, that the bottleneck is the manufacturing area since it is where they carry out the greatest amount operations and therefore entails a longer production time, the current standard time for the production of polo shirts was obtained from the analysis, which was 36.99 minutes. An improvement proposal was developed based on the study of times and movements where it is proposed, the standardization of operations, a new work methodology, the redistribution of machines and also, the organization of the work space to facilitate the search for materials and equipment through the 5s methodology, where the new standard time is obtained as a result, which is 32.70 minutes, which translates into an increase of 779 polo shirts per month to 881, that is, an improvement of 13% compared to the method current.Item Estudio de tiempos y movimientos aplicado a la producción de calzado en la empresa Ralma(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial en Procesos de Automatización, 2022-09) Espinoza Avalos, Andrés Stalyn; Carranza Garcés, Ángel MauricioThe footwear industry exposes a limited control of production processes, causing deficiencies in the verification of methods, materials and operating time, which causes performance losses related to labour and machinery, this problem is not different for Ralma footwear for this reason the research aims to develop a study of times and movements that will increase the production of the company. For which, the study uses a quantitative approach with a descriptive research, starting with the identification of the production areas, followed by the timing of operation time and detailing the movements carried out during the manufacture of footwear, defining the standard time of each operation through the use of the manual of work study practices, the scales of valuation of the rhythm of work and the system of supplements dictated by the ILO. The results show that it takes 520.63 minutes and 157.71 metres to manufacture a batch of 10 pairs of shoes, indicating the existence of dispensable and unnecessary activities that take place in the processes in the 5 production areas. Therefore, it is concluded that there is a need to implement a new method linked to combining or eliminating operations and inspections with the aim of eliminating transports and waiting times, implementing new equipment and instrument arrangements to reduce production time in each work area and increase the company's productivity.
