Item Manufactura esbelta para la optimización de los procesos postcosecha en una empresa florícola(Universidad Técnica de Ambato. Facultad de Ingeniería en Sistemas, Electrónica e Industrial. Carrera de Ingeniería Industrial en Procesos de Automatización, 2022-09) Acevedo Caguate, Jhon Paul; Rosero Mantilla, César AníbalThis research project was carried out with the main purpose of optimizing the postharvest processes of a flower growing company through lean manufacturing tools. This was executed through the fulfillment of certain stages within the investigative process: Stage 1) the fulfillment of an analysis of the current situation of the company's postharvest production processes, through the collection of information using tools such as: interviews, aimed at operational personnel; the indirect observation for the identification of the resources, materials and the stages of the process that intervene in the elaboration of bouquets of roses; the study of times and movements to determine the flow of work; the study of the standard time in a process cycle (150 stems); the current production capacity within the area; and, the waste or changes present in the process; Stage 2), which consisted of the analysis of waste, the evaluation of certain Lean Manufacturing tools and the selection of the most appropriate LM tools that will minimize or eliminate this waste, considering certain predominant factors such as ease of implementation, support of the senior management, the residues attacked, the background of the application of the LM in similar industries and the impact on the postharvest process itself; Y, Stage 3), in which a proposal for the implementation of the selected tools (5S, Visual Management and Standardization) was proposed for the reduction of operational waste and the improvement of processes, procedures and activities aimed at the post-harvest production of roses. of the export. Finally, through this research project, focused on process optimization, it was possible to design 3 implementation guides according to the tools selected within the evaluation process. That is to say, the company acquires applicable models of each tool, considering the critical points, factors, zones and times in which it is necessary to minimize localized waste within the flower post-harvest process.
