| dc.description | El objetivo del presente estudio es proponer herramientas de Manufactura Esbelta para optimizar el proceso de elaboración de queso fresco en la microempresa «Productos Lácteos Marlen». El estudio surge debido a la existencia de desperdicios operativos que afectan al rendimiento del sistema de producción, en particular los movimientos innecesarios, los transportes improductivos, las actividades sin valor añadido y los desequilibrios en la distribución del trabajo; lo que limita la eficiencia y la productividad de la microempresa. El diagnóstico de procesos se llevó a cabo mediante herramientas como el Value Stream Mapping (VSM), el diagrama analítico, el estudio de tiempos y movimientos y el análisis de la capacidad de producción, lo que permitió identificar los principales problemas dentro de la cadena de producción. Sobre esta base, se identificaron oportunidades de mejora destinadas a optimizar el flujo de trabajo, reducir los tiempos improductivos y mejorar el uso de los recursos operativos. A partir de los resultados obtenidos, se seleccionaron herramientas de Manufactura Esbelta como las 5S, el trabajo estandarizado y el control visual, lo que permitió formular propuestas centradas en la organización de los espacios de trabajo, la eliminación de actividades innecesarias, la estandarización de procedimientos y el refuerzo del control. La propuesta planteada permitió optimizar la organización y continuidad del proceso productivo, reduciendo actividades innecesarias y mejorando el aprovechamiento de los recursos operativos. Asimismo, los resultados evidencian que la implementación de herramientas de Manufactura Esbelta fortalece la eficiencia, calidad y mejora continua en la elaboración de queso fresco. | |
| dc.description.abstract | The objective of this study is to propose Lean Manufacturing tools to optimize the fresh cheese production process at the microenterprise “Productos Lácteos Marlen.” The study was prompted by the existence of operational waste that affects the performance of the production system, particularly unnecessary movements, unproductive transport, activities with no added value, and imbalances in the distribution of work; which limit the microenterprise’s efficiency and productivity. The process diagnosis was carried out using tools such as Value Stream Mapping (VSM), the analytical diagram, time and motion studies, and production capacity analysis, which allowed for the identification of the main problems within the production chain. On this basis, improvement opportunities were identified aimed at optimizing the workflow, reducing downtime, and improving the use of operational resources. Based on the results obtained, Lean Manufacturing tools such as 5S, standardized work, and visual control were selected, enabling the formulation of proposals focused on the organization of workspaces, the elimination of unnecessary activities, the standardization of procedures, and the strengthening of control. The proposed approach optimized the organization and continuity of the production process, reducing unnecessary activities and improving the utilization of operational resources. Furthermore, the results show that the implementation of Lean Manufacturing tools enhances efficiency, quality, and continuous improvement in the production of fresh cheese. | |
