Carrera de Ingeniería en Alimentos, 2021-09) Pachucho Chuquiana, Isabel Johanna; Peñafiel Ayala, Rodny DavidThe study of the milk value chain in the province of Tungurahua, canton Píllaro, evaluated the socio-institutional performance and the circular potential of the milk chain considering socioeconomic, institutional, productive, and transactional components. The methodology used in this research was the IASA (Integrated Agrifood Sustainability Evaluation) evaluation framework. This framework makes it possible to assess the linkages within a value chain. The study area was located in order to map the stages, primary and technical support activities, information flows and prices in the milk chain. Six links in the production chain were analyzed, and the reality of the milk producer was made clear. A structured survey was applied to milk producers, supported by Cronbach's alpha test and analyzed using descriptive statistics and SPSS statistics software. From the results obtained, it was observed that most of the producers are women and the farms analyzed generally use family labor. In addition, it was identified that product transactions are relatively slow and informal. Also, the analysis of transactional costs found that most producers influence the raw material transaction. The governance dynamics in this study chain are modular in nature due to the codification of information and the supply base. Finally, in the economic potential, it was proposed to elaborate two by-products from whey, freeze-dried and encapsulated whey.Item Análisis del sistema corto de comercialización de alimentos agroecológicos como aporte al desarrollo productivo del sector rural del cantón Píllaro(Universidad Técnica de Ambato. Carrera de Ingeniería en Alimentos, 2021-09) García Yanchatuña, Dario Alexander; Franco Crespo, Christian DavidThe development of the rural population has been a topic of interest for many sectors, through the emergence of new strategies a new way to generate economic and social equality through fair marketing networks is proposed. Therefore, the present work was carried out with the purpose of analyzing the short agroecological food marketing systems as a contribution to the productive development of the rural sector of the canton of Píllaro. For this purpose, a form was applied consisting of open and closed questions that contemplate variables such as: age, number of family members, amount of land, size of land, quantity produced, variety of product, sales channels, travel time to the points of sale. Data analysis revealed the existence of a wide variety of vegetable species, especially vegetables, which are distributed through three channels: markets, agroecological fairs and home delivery baskets. The price of products in agroecological fairs and home delivery baskets is usually higher than that offered in wholesale markets, and the short circuits allow for proximity to the consumer, which provides greater confidence in the products offered. For the evaluation of the indicators, the IDEA method was used, which establishes 3 scales: agroecological, socio-territorial and economic sustainability, obtaining a score of 35.2 for the sustainability scale, 30.52 for the socio-territorial part and 17.5 for the economic part. These results show a sustainable system that allows the environmental, social and economic improvement of the producers of the rural sector of Píllaro.
