Carrera de Ingeniería en Alimentos, 2020-09) Andrade Sánchez, Viviana Nathaly; Franco Crespo, Christian DavidThe need for healthy and nutritious food production that enhances food sovereignty has been a concern of many governments. Therefore, this work was carried out with the purpose of identifying sustainable food production models in Píllaro County as a contribution to food sovereignty. To this end, a survey was applied with agro-ecological parameters, where variables such as: type of production (agricultural and livestock), size of land (approximate area per farmer), quantity produced (volume of production for each item), and crop diversification (number of crops used per plot of land) were studied. Through this method, an extensive list of agricultural species cultivated by the population analyzed was found. Through the analysis of results, three agro-food models with sustainable production were identified. These models are based on crop diversification and have been established as high, medium and low diversification agro-food models. Similarly, Food Sovereignty was evaluated in order to ascertain the contribution of the models identified. For this evaluation, indicators of Food Sovereignty were used, taking into account five parameters: access to resources, production, processing and marketing models, food consumption and the right to food, and agrarian policies. These results demonstrate the influence of agrifood models on Food Sovereignty in Píllaro canton and prove that crop diversification allows for the availability of varied foods.
