Glycolic acid is a highly demanded compound in the cosmetic and pharmaceutical industries due to its exfoliating and regenerative properties on the skin. It is traditionally produced on an industrial scale through chemical synthesis, a method that presents both environmental and economic limitations, thus prompting the need for sustainable and efficient biotechnological alternatives. In this context, the present research focused on developing a submerged culture of Lecanicillium lecanii using final cane molasses as a substrate for glycolic acid production, with strict monitoring of key process variables such as pH, acidity, reducing sugar concentration, and biomass production through analytical techniques including spectrophotometry and acid-base titration. Furthermore, microbial growth kinetics were fitted to mathematical models (Gompertz, Logistic, and Richards) to determine the model with the highest predictive capability, based on determination coefficients, standard error, and relative percentage error. The results indicate that L. lecanii is capable of producing glycolic acid under controlled conditions, with a higher bibliographically reported yield compared to other secondary metabolites, validating its potential as an alternative and sustainable biological system. Additionally, mathematical modeling enabled the establishment of growth patterns applicable to future production scales, providing a scientific foundation to optimize bioprocesses aimed at obtaining industrially relevant active ingredients with reduced environmental impact.

The study consists of obtaining probiotic strains from three samples of cassava, sugar cane and bovine feces, as an alternative to the use of antibiotics in the livestock sector and to counteract the spread of resistance genes (RAM), since probiotics are live microorganisms that have a positive effect on the health of the host. The 63 strains obtained from the three samples have the phenotypic characteristics of model probiotic microorganisms such as catalase negative, Gram positive, with creamy or white round morphology. Likewise, the probiotic potential of the strains was evaluated by in vitro tests such as cell adhesion, tolerance to gastrointestinal conditions such as low pH and bile salt concentrations. Also, the selection of probiotic strains should satisfy safety criteria, they should not be toxic or pathogenic, susceptible to antibiotics, without hemolytic activity and have antagonistic activity against pathogens. Finally, only two strains from the cassava and sugar cane samples have the best characteristics and best efficiency to be considered probiotic strains, because they did not present hemolytic activity and have cell adhesion, can survive at pH 2 to 3 and bile salts of 0.3 to 0.5 percent, had susceptibility to six antibiotics with the highest range of inhibition compared to other strains, however, no strain presented antagonistic activity against E. coli bacteria.

Komagataeibacter xylinus is the most efficient species, being able to synthesize bacterial cellulose biofilms (CB) from a great variety of carbon sources. This biopolymer has received considerable attention on the last few years due to diverse commercial applications, especially in the food industry and biomedical due to its high purity and variety in form and texture. In the present study, native strains of K. xylinus were isolated and characterized from acetic sources such as wine, wine vinegar and kombucha SCOBY in the media H-S and GYC comparing its production with the strain from control K. xylinus DSM 2004 in the different carbon sources (glucose, whey and ethylene glycol) in static cultivation. Two strains were isolated from the kombucha SCOBY. The results revealed that both strains denominated PDC 21 and PDC 25, and the control strain synthesized CB in different amounts from the glucose, ethylene glycol and fermented milk serum. The strain PDC 25 produced almost 8 more times CB than the strain control in the standard H-S medium compared with PDC 21 that only synthesized 0.4 times the CB humid, meanwhile with ethylene glycol PDC 25 synthesized 1.4 and 3.46 more times CB in the media H-S ethylene glycol and K- ethylene glycol respectively compared by the control strain. However, K xylinus DSM 2004 produced larger amounts of CB in the media that contained fermented milk serum.
