Carrera de Ingeniería en Alimentos, 2015) Pepe Guato, Fernando Javier; Pacheco Tigsilema, María TeresaThis research work was made in the company "WATER LIFE" for the purpose of carrying out the implementation of the standard of GPM, study that was based on Regulation of Executive Decree 3253 Official Register No. 696, for that the company was diagnosed in compliance with these requirements by applying an initial check list, where 47.73 percent of overall compliance, why an improvement plan was proposed based on nonconformity reported found, to carry out this implementation changes to the infrastructure of the company is conducted, trained staff on the need for BPM, starting with the correct use of his uniform, proper hand washing, before starting the process or once used the toilet, proper food handling, cleaning and disinfection processes, pest control and take control of personnel records and production. Once the process of implementing BPM Company now complies with 89.39 percent of the requirements of this standard, to check its validity concluded monthly microbiological analyzes were performed, with which compliance is verified.
