Carrera de Ingeniería en Alimentos, 2021-09) Castillo Garzón, John Bagner; Ortiz Escobar, Jacqueline de las MercedesThe current degree work consisted of the development of a manual of good manufacturing practices (GMP) for the company INPHEC Agroindustrial company located in the city of Ambato. A diagnostic evaluation was carried out considering the ISO-19011: 2018 standard and the requirements of Good Manufacturing Practices of Resolution ARCSA-DE-067-2015-GGG, the company has a 36.73 percent. The non-conformities were analyzed considering the methodology based on the ISO 22000: 2005, standard and corrective actions were established for the non-conformities presented in the diagnostic evaluation, where various adaptations and modifications in the infrastructure and control measures were suggested. Subsequently, a manual of Good Manufacturing Practices was developed taking into account the shortcomings found in the diagnosis stage and the operating conditions of the company. The good manufacturing practices manual is made up of 12 chapters and is made up of standardized operating procedures, standardized sanitation operating procedures, records, and formats.
