Carrera de Ingeniería en Alimentos, 2021-01) Lara Espín, Mayra Alejandra; Cerda Mejía, Liliana AlexandraThe incidence of the consumption of non-caloric sweeteners (aspartame and acesulfame potassium) in the population of Ambato canton was determined, through the application of surveys, the same ones that were done online, through the Google Forms Software, due to the emergency health of COVID-19. The instrument was validated, using the Cronbach's Alpha method, as well as defining the sample size, through statistical calculations. In the results obtained, the ignorance of a large part of the population about food additives in general, as well as non-caloric sweeteners (aspartame and acesulfame potassium), was evidenced. The figures obtained show that there is an increase in the consumption of products that contain non-caloric sweeteners. Several investigations mention the possible health conditions of people who consume these additives, these investigations have been developed in both animals and humans. These sweeteners are commercial and consumed by the entire population, under the support of the Food and Drug Administration (FDA) and the Joint FAO / WHO Expert Committee on Food Additives (JECFA). There are several food groups that have in their composition such aspartame and acesulfame potassium, most consumers do not know what each product contains, therefore some may exceed the admissible daily intake of each sweetener, this excess can generate later problems.
