Abstract

Andean blackberry (Rubus glaucus) is highly perishable, leading to significant postharvest losses due to its rapid deterioration. This study aimed to evaluate the effectiveness of alternative products for postharvest management in order to identify the most suitable treatment to extend shelf life and maintain fruit quality. The research followed a quantitative experimental approach using a completely randomized design (CRD) with a 2×3 + 1 factorial arrangement and three replications, where treatments included albumin + glycerin at doses of 3, 5, and 7 g/L, ozonized oil at doses of 3, 5, and 7 cc/L, and a control. The evaluated variables were weight loss, fruit firmness, total soluble solids (°Brix), and shelf life over a five-day storage period. The results showed significant differences among treatments, with ozonized oil presenting the lowest weight loss (16.31%–17.95%), the highest firmness values (0.43–0.44 kg/cm²), and reduced fruit deterioration, while albumin + glycerin treatments resulted in higher total soluble solids (10.98–11.91 °Brix). Additionally, the 7 cc/L dose of ozonized oil achieved the best numerical values in terms of firmness and preservation. It is concluded that ozonized oil was the most effective alternative for postharvest conservation of Andean blackberry, as it reduced weight loss, maintained firmness, and minimized fruit deterioration during storage.

La mora de Castilla presenta una alta perecibilidad, lo que ocasiona pérdidas significativas durante la poscosecha debido a su rápido deterioro. La presente investigación tuvo como objetivo evaluar la eficacia de productos alternativos en la poscosecha de frutos de mora de Castilla (Rubus glaucus), con el fin de identificar el tratamiento más adecuado para prolongar su vida útil y mantener sus características de calidad. El estudio se desarrolló bajo un enfoque cuantitativo de tipo experimental, utilizando un diseño completamente al azar (DCA) en arreglo factorial 2×3+1 con tres repeticiones. Se evaluaron albúmina + glicerina en dosis de 3, 5 y 7 g/L, aceite ozonizado en dosis de 3, 5 y 7 cc/L, además de un tratamiento testigo. Las variables analizadas fueron pérdida de peso, firmeza del fruto, sólidos solubles totales (°Brix) y duración en percha durante un periodo de almacenamiento de cinco días. Los resultados mostraron diferencias significativas entre tratamientos. Los tratamientos con aceite ozonizado presentaron los menores porcentajes de pérdida de peso (16,31 %–17,95 %), los mayores valores de firmeza (0,43–0,44 kg/cm²) y una menor degradación de los frutos durante el almacenamiento. Por su parte, los tratamientos con albúmina + glicerina registraron mayores valores de sólidos solubles totals (10,98–11,91 °Brix). Además, la dosis de 7 cc/L de aceite ozonizado presentó los mejores valores numéricos de firmeza y conservación del fruto. Se concluye que el aceite ozonizado fue el producto alternativo más eficaz para la conservación poscosecha de la mora de Castilla, al reducir la pérdida de peso, mantener la firmeza y disminuir el deterioro de los frutos durante el almacenamiento
