Los dulces tradicionales y la identidad cultural del Centro Histórico de Quito; Caso de estudio: Ponche de Carreta

Abstract
La paulatina desaparición del oficio de quienes elaboran el tradicional Ponche de
Carreta en el Centro Histórico de Quito, ha provocado que las nuevas generaciones
desconozcan el valor histórico y cultural que este posee, perdiendo el sentido de
pertenencia a la colectividad, convirtiéndose en el nodo problemático que atañe al
Ponche de Carreta, el cual motivó al desarrollo de la investigación, planteándose como
principal objetivo, investigar los dulces tradicionales y la identidad cultural del Centro
Histórico de Quito con énfasis en el Ponche de Carreta. El presente estudio es de tipo
transversal no experimental, en la cual se realizó un análisis desde un enfoque
cualitativo a través de un alcance de tipo estudio de caso, para el desarrollo de la
metodología se realizó observación de campo mediante la ficha A4 del Instituto
Nacional del Patrimonio Cultural del Ecuador, así como la aplicación de entrevistas
semiestructuradas; Estos instrumentos permitieron recabar información, que fue
interpretada en base a la triangulación con la teoría de Hall acerca de la Identidad
Cultural, obteniendo como principal resultado que el Ponche de Carreta es un símbolo
de herencia y tradición para quienes lo elaboran y consumen, lo que da paso a concluir
que este dulce tradicional posee características representativas, desde su historia,
uniforme e ingredientes que forman parte de la memoria colectiva y por tanto de la
identidad cultural.
Description
The gradual disappearance of the craft of those who prepare the traditional "Ponche de
Carreta" in the Historic Center of Quito has led to the new generations being unaware
of its historical and cultural value, losing a sense of belonging to the community. This
phenomenon becomes the core issue related to "Ponche de Carreta," which motivated
the development of this research. The main objective of this study is to investigate
traditional sweets and the cultural identity of the Historic Center of Quito, with a
particular emphasis on "Ponche de Carreta." This research is a non-experimental crosssectional study that employed a qualitative approach, utilizing a case study design. The
methodology involved field observation using the A4 form from the National Institute
of Cultural Heritage of Ecuador and the application of semi-structured interviews.
These instruments allowed for the collection of information that was interpreted based
on triangulation with Hall's theory of Cultural Identity. The main result reveals that
"Ponche de Carreta" is a symbol of heritage and tradition for both those who make and
consume it. This leads to the conclusion that this traditional sweet has representative
characteristics, encompassing its history, uniform, and ingredients that are part of
collective memory and, therefore, cultural identity.
