Abstract
Con el afán de demostrar la importancia del patrimonio alimentario y el turismo
naranja dentro del cantón Santiago de Píllaro, donde se identificó una problemática
enfocada en el desconocimiento en relación a las temáticas de estudio, por esta razón
dentro de este proceso investigativo se obtuvo como objetivo general investigar el
patrimonio alimentario y el turismo naranja en el cantón, el cual fue de gran
importancia debido a que por medio de esto se pudo identificar el nivel de
conocimiento, y a su vez se apoyó con el impulso de mantener preparaciones y técnicas
ancestrales, por medio de las cuales se pudo construir un identidad cultural, para ello
la metodología utilizada fue cualitativa, por medio de la investigación no experimental
de corte transversal. Para la recolección de datos en el campo se aplicaron instrumentos
que fueron validados y adaptados por el GAD de Píllaro, como fue el caso de las
entrevistas que fueron elaboradas con el fin de identificar el conocimiento que tenían
las personas que se dedican a impulsar la gastronomía, otro instrumento utilizado fue
la ficha de registro A4 conocimientos y usos relacionados con la naturaleza y el
universo (INPC), por medio de estos instrumentos se obtuvo como resultado que el
patrimonio alimentario tiene gran significado simbólico, identitaria, cultural jugando
un papel principal al momento de la construcción de identidades, y como conclusión
el patrimonio alimentario por medio del turismo naranja impulsó el fomento y la
preservación de los saberes ancestrales en cada preparación.
Description
With the desire to demonstrate the importance of food heritage and orange tourism
within the Santiago de Píllaro canton, where a problem focused on ignorance in
relation to the study topics was identified, for this reason within this investigative
process the objective was obtained generally investigate the food heritage and orange
tourism in the canton, which was of great importance because through this the level of
knowledge could be identified, and in turn it was supported with the impulse to
maintain ancestral preparations and techniques, for through which a cultural identity
could be built, for this the methodology used was qualitative, through nonexperimental cross-sectional research. To collect data in the field, instruments were
applied that were validated and adapted by the GAD of Píllaro, as was the case of the
interviews that were developed in order to identify the knowledge that people who are
dedicated to promoting gastronomy had. , another instrument used was the A4 record
sheet knowledge and uses related to nature and the universe (INPC), through these
instruments it was obtained that food heritage has great symbolic, identity, and cultural
meaning, playing a main role in moment of the construction of identities, and in
conclusion the food heritage through orange tourism promoted the promotion and
preservation of ancestral knowledge in each preparation.
