Abstract: | At present, food industries are booming in the development of functional products, in order to satisfy consumer needs, due to this, in the bakery and pastry area, the inclusion of non-conventional flours is being sought, that is, from other sources such as cereals (rice, oats, millet), pseudocereals (quinoa, amaranth, serracan wheat) and tubers (potato, sweet potato, carrot). That is why there are different researches that show the behavior of non-conventional flours studied in the elaboration of products such as breads, cookies, pastas, cupcakes and noodles, where their behavior tends to vary according to the level of substitution of wheat flour, finding that most authors use a range of substitution from 5% to 35% in the mixtures, being the effects that presented greater variation within its proximal composition the moisture and protein content, the first is related to the stability of the product since the lower the moisture content increases the shelf life of the product and the second effect is related to the nutritional content, i.e. the use of unconventional flours help to obtain products with better quality for the consumer. |
Description: | En la actualidad las industrias alimentarias están en el auge del desarrollo de productos funcionales, con el fin de satisfacer las necesidades del consumidor, debido a esto en el área de panificación y pastelería se está buscando la inclusión de harinas no convencionales, es decir provenientes de otras fuentes como cereales (arroz, avena, mijo), pseudocereales (quinua, amaranto, trigo serraceno) y tubérculos (papa, camote, zanahoria). Es por ello que se cuentan con diferentes investigaciones que muestran el comportamiento de las harinas no convencionales estudiadas en la elaboración de productos como panes, galletas, pastas, cupcakes y fideos, donde su comportamiento tiende a varias con forme es el nivel de sustitución de la haría de trigo, encontrando así que la mayoría de autores utiliza un rango de sustitución del 5 por ciento al 35 por ciento en las mezclas, siendo los efectos que mayor variación presentaron dentro de su composición proximal el contenido de humedad y proteína, el primero está en relación con la estabilidad del producto puesto que mientras menos sea el contenido de humedad aumenta la vida útil del producto y el segundo efecto está en relación con el contenido nutricional, es decir la utilización de harinas no convencionales ayudan a obtener productos con una mejor calidad para el consumidor. |
