| Zusammenfassung: | El presente trabajo de investigación tiene como tema: “LAS BEBIDAS TRADICIONALES EN LA OFERTA GASTRONÓMICA DE LA PROVINCIA DE TUNGURAHUA”, desarrollándose bajo un enfoque cualitativo, para el logro del objetivo: analizar las bebidas tradicionales no alcohólicas y la oferta gastronómica de la provincia de Tungurahua; que son parte esencial de la cultura e historia de la provincia, pero con escasa promoción. La investigación fue exploratoria, descriptiva y partió de una revisión bibliográfica para luego realizar el trabajo en campo bajo un muestreo no probabilístico intencional aplicando una entrevista a expertos y lográndose identificar y describir las bebidas tradicionales no alcohólicas y la oferta gastronómica de Tungurahua a través de un instrumento validado por el Instituto Nacional del Patrimonio Cultural. Luego del análisis de la información se diseñó un catálogo de bebidas tradicionales no alcohólicas para difundir la oferta gastronómica de la provincia de Tungurahua. |
| Beschreibung: | The subject of this research work is: "TRADITIONAL BEVERAGES IN THE GASTRONOMIC OFFER OF THE PROVINCE OF TUNGURAHUA", developed under a qualitative approach, to achieve the objective: to analyze traditional nonalcoholic beverages and the gastronomic offer of the province of Tungurahua; that are an essential part of the culture and history of the province, but with little promotion. The research was exploratory, descriptive and started from a bibliographic review to then carry out the field work under an intentional non-probabilistic sampling, applying an interview to experts and being able to identify and describe the traditional nonalcoholic beverages and the gastronomic offer of Tungurahua through a instrument validated by the National Institute of Cultural Heritage. After analyzing the information, a catalog of traditional non-alcoholic beverages was designed to disseminate the gastronomic offer of the province of Tungurahua. |
