    The market of food consumption on the basis of nuts is important and deals with great interest at the global level, especially in Latin America and Ecuador is no exception. The first primitive men cultivated and harvested nuts to survive, the food usually consumed by be of great ability to withstand climate changes and easy storage. The consumption of nuts for all ages in people has health benefits as part of the diet in the human being. And each one of the nuts that can be found in the province has its nutritional value that enhances the habit of consumption and prevents cardiovascular diseases that can occur in young people, adults and the elderly. This research work is based on the characterization of the consumers of food on the basis of nuts in the Province of Tungurahua, taking into account the behavior of consumers, food consumption and the studies that have shown that the Mediterranean diet, nuts are a nutritional component. Obtaining as a result that in the population of Tungurahua, there is a high consumption with respect to the variation of power on the basis of nuts. There is a satisfactory consumption of nuts in the persons studied, that they have changed their habit of healthy consumption by proposals that improve their way of life, to look and feel good in the modern society. In spite of the public selling price is high compared to other foods such as fruits, vegetables, prepared foods and snacks.
