Carrera de Alimentos, 2023-09) Moposita Teneda, Jeremias Abraham; Sánchez Garnica, Manoella AlejandraThe objective of this work was to develop a manual of Good Manufacturing Practices for the company AGROPAPA - YAPUCHIPS located in the parish of Montalvo, Tisaleo, which is dedicated to the production and distribution of potato chips locally. The future purpose of the manual is to obtain GMP certification issued by the National Agency for Regulation, Control, and Sanitary Surveillance (ARCSA). Based on the verification guide LV - AJMP - 2023, previously established in the regulation ARCSA - 067 - 2015, the initial diagnosis of the company was carried out by evaluating the eight chapters of the regulation, considering three levels of evaluation and obtaining the results of compliance with 48.67 percent, non-compliance with 40.67 percent and not applicable with 10.67 percent. Standard Operating Procedures (SOPs) and Sanitation Procedures (SSOPs) were developed in relation to the nonconformities detected in the initial diagnosis and the requirements established in the ARCSA - 067 - 2015 regulations, which guarantee adequate cleaning and hygiene conditions throughout the production chain to obtain quality and safe products. An action plan was proposed to remedy the detected nonconformities and take into account the needs of the company and its economic capacity to obtain GMP certification in the future.
