    Las tendencias culinarias y la cocina tradicional, caso de estudio: cantón Ambato

    Culinary trends are innovations that occur in gastronomy, their concepts are derived from a phenomenon to be solved including traditional cuisine, it is also important in society, precisely in communities that have a sense of belonging to their traditional culinary preparations. It is for this reason that this research aims to analyze the culinary trends and traditional cuisine of the Ambato canton, in order to identify opportunities in the local gastronomic sector. To achieve the objective, a qualitative approach was used with a non-experimental cross-sectional design. It also has a scope of case study that is complemented by a non-probabilistic sampling by judgment applied to gastronomic experts in the Ambato canton. This could be developed thanks to the use of the observation and registration form of gastronomic trends created for the independent variable, in the same way, the file created by the (INPC) was used, specifically the registration and inventory file Intangible Cultural Heritage A4 Knowledge and uses related to nature and the universe, where through the use of the structured conversation technique, the necessary information on traditional Ambateño cuisine was collected. Thus, the results have been obtained where different dishes that exist in the canton but without culinary innovation are highlighted, reason enough to create the proposal of this research, the creation of a 5-course Ambateño menu and the creation of a virtual museum that helps to archive modern and traditional culinary practices.
