Abstract
The objective of this research work was to determine the antimicrobial effect of
eucalyptus honey at different concentrations on cultures of Mammalicococcus sciuri. The first
stage of the study consisted of the physicochemical characterization of eucalyptus honey, in order
to establish those factors that determine its antimicrobial properties, the following results were
obtained: Electrical conductivity (0.64 mS /cm), Humidity (14.80 %), Light amber color (50.40
mmPFund), Ash (0.46 %), pH (5. 43), HMF (11.83 mg HMF / kg), Diastase index (22.71 °S),
Phenols (80.15 GAE / 100 g) and Flavonoids (1.49 mg QE / 100 g).
In the second stage, the antimicrobial effect of eucalyptus honey was tested using the
diffusion method in modified agar in wells, and different dilutions of eucalyptus honey
were compared on M. sciuri in order to find the minimum active dilution (MAD) at which
bacterial growth is inhibited, determining a MAD value of 15%.
The third stage of this study consisted of defining the influence of eucalyptus honey on
colony forming units (CFU) in the brain heart agar culture medium and comparing it with
an artificially prepared sugar solution that pretends to imitate the chemical composition
of honey, observing values such as: for eucalyptus honey (3.85 x 10 6 CFU/ml) and for
the sugar solution (6.42 x 10 6 CFU/ml), evidencing the antimicrobial effect of eucalyptus
honey on M. sciuri.
