Abstract
This study evaluated the effect of beetroot meal (Beta vulgaris) on productive performance, pigmentation, and sensory characteristics of Cobb 500 broiler chicken meat. A total of 200 chickens were distributed into five treatments: T0 (0 %), T1 (0.05 %), T2 (0.1 %), T3 (0.15 %) of B. vulgaris meal, and T4 (0.014 % cantaxanthin), with four replicates of 10 birds each. Results showed that final body weight was T0: 3106.50 g; T1: 3147.00 g; T2: 3197.75 g; T3: 3315.00 g; T4: 3257.00 g (P = 0.0081), weight gain was T0: 3055.00 g; T1: 3093.00 g; T2: 3142.50 g; T3: 3259.75 g; T4: 3208.50 g (P = 0.0069), and feed conversion ranged from 0.59 to 0.62 (P = 0.1554), without significantly affecting productive performance. The benefit/cost ratio was T2: 2.20 and T4: 2.28, indicating that both additives are economically viable. DMS pigmentation increased progressively with B. vulgaris inclusion, with T3 being the ideal dose (106.50), while T4 showed 104.25. Sensory evaluation in raw meat indicated a slight increase in odor and improved appearance in T2 and T3, and drip loss decreased up to 2.81 % at 72 h in treatments with higher B. vulgaris inclusion. These results suggest that beetroot meal enhances meat pigmentation, quality, and sensory acceptance without compromising performance or profitability, highlighting T2 and T3 as the most effective treatments

El presente estudio evaluó el efecto de la harina de remolacha (Beta vulgaris) en índices productivos, pigmentación y caracterización sensorial de la carne de pollos Cobb 500. Se emplearon 200 pollos distribuidos en cinco tratamientos: T0 (0 %), T1 (0,05 %), T2 (0,1 %), T3 (0,15 %) de harina de B. vulgaris y T4 (0,014 % de cantaxantina), con cuatro repeticiones de 10 aves cada una. Los resultados mostraron que el peso final fue T0: 3106,50 g; T1: 3147,00 g; T2: 3197,75 g; T3: 3315,00 g; T4: 3257,00 g (P = 0,0081), la ganancia de peso T0: 3055,00 g; T1: 3093,00 g; T2: 3142,50 g; T3: 3259,75 g; T4: 3208,50 g (P = 0,0069), y la conversión alimenticia osciló entre 0,59 y 0,62 (P = 0,1554), sin afectar significativamente el desempeño productivo. La relación beneficio/costo fue T2: 2,20 y T4: 2,28, mostrando que ambos aditivos son rentables. La pigmentación DMS aumentó progresivamente con la inclusión de B. vulgaris, siendo T3 la dosis ideal (106,50), mientras que T4 presentó 104,25. La evaluación sensorial en carne cruda indicó un leve incremento del olor y mejoras en la apariencia en T2 y T3, y la pérdida por goteo disminuyó hasta 2,81 % a 72 h en los tratamientos con mayor inclusión de harina de B. vulgaris. Estos resultados sugieren que la harina de remolacha mejora la pigmentación, calidad y aceptación sensorial de la carne sin comprometer el desempeño ni la rentabilidad, destacando T2 y T3 como los tratamientos más efectivos.
