The Food Industries have seen the need to have a study of times since their production capacity in many of them is deficient, dead times are generated within the production process and inadequate control of raw materials, machinery and labor is carried out. Therefore, the general objective of the research project is based on the standardization and study of times for the improvement of the production process in the INLADEC Dairy Industry. In addition, the methodology that was used to determine the product with the highest demand is a sales analysis and ABC graph. On the other hand, for the proper development of the study of times, the following aspects are taken into account, initially it was determined that the most appropriate technique is the return to zero and that the most suitable equipment is the chronometer; Subsequently, it was determined through a statistical method that 10 cycles must be performed to take time in each of the jobs. Obtaining the following results, the product with the highest demand within the production line is 1L Produleche Milk with a consumption percentage of 28.54 percent, which corresponds to a monetary valuation of $ 2,198,225.00 per year, in addition, the process survey was carried out whose procedure is based on: the description of the production process, flow charts and analytical courses. Finally, with the development of the study of determined times, the result is that for the fat determination process a reduction of 1.24 min is achieved, which corresponds to a 19.26 percent improvement; This is how it was developed for each of the processes. In addition, it was determined that an improvement of 4.5 percent can be achieved within the production process.
