This research aims to analyze the difficulties encountered in poultry San Diego in terms of accounting policies in inventory control, for which data collection processes are carried out through field work as well as of employee surveys, it seeks to propose a series of accounting policies to help improve inventory management and which in turn contribute to have an accurate and timely information thereof. It is also known that improper management of inventories could have serious consequences , such as ignoring the real production or unable to sustain sales which would result in the lack of real profits, we must also take into account the need to meet tax regulations , the Internal Revenue Service as regulator and controller of the tax is also on the ability to request any accounting or tax information to the company so that in case of not having support in inventories could pay values high and that do not conform to the reality of the company.
