Carrera de Ingeniería en Alimentos, 2020-01) Tapia Chicaiza, Vanessa Alejandra; Tapia Vasco, Luis JavierA manual of good manufacturing practices was designed for the Ice Cream Parlor located in the Belisario Quevedo parish, of the Latacunga cantón, according to Resolution 067-2015-GGG of the National Agency for Regulation, Control and Sanitary Surveillance (ARCSA) in its Substitute Technical Standard for Good Manufacturing Practices for Processed Foods. The initial situation of the Ice Cream Parlor was evaluated through the checklist of compliance and non-compliance with the requirements of BPM that frames: facilities; equipment; raw material and supplies; production operations; labeling, packaging and packaging; Storage and quality control. The shortcomings revealed in the Ice Cream Parlor, enabled the preparation of a corrective action plan for the lifting of BPM requirements procedures and programs, based on the application of Standardized Sanitization Operating Procedures (SOPs) and Standardized Operational Procedures (SOPs) ) to prepare the Manual. Once the improvements in the analyzed areas were applied, the checklist was reassessed, obtaining a general degree of compliance with the Ice Cream Parlor of 76.920 percent, due to the use of the procedures described in the Manual and the training provided to the personnel that He works in the production plant as the Legal and Technical Manager.
