Due to its high nutrient and water content, milk is prone to bacterial growth. Cooling it immediately after milking to temperatures below 4°C significantly reduces bacterial multiplication, reducing the risk of contamination and spread of pathogens. In addition, effective cooling preserves the milk's organoleptic characteristics, such as flavor and freshness, and maintains its nutritional value. This not only complies with food safety standards, but also improves product acceptance by consumers and prolongs shelf life, which is essential for logistics and distribution in the dairy industry. Therefore, an efficient cooling system is indispensable to preserve the integrity and quality of milk from milking to the final consumer. The project developed for the company LactoZam in the city of Salcedo consisted of the implementation of a control and monitoring system for raw milk using Internet of Things (IoT) technologies to optimize the quality and efficiency of production processes. Using a diversity of IoT sensors such as the PH4502C, DTH11, DS18B20 and the ultrasonic HCSR04, critical measurements such as pH, milk temperature, ambient temperature, humidity and the filling level of the reservoir tanks were monitored in real time. Data collection was managed through the connection between the ESP32 board, and the control application developed in Dart with Flutter, these data were stored in a MySQL database, allowing analysis and remote access to send alerts and notifications on the current status of the milk. In contrast to previous manual methods, the automated system provided more consistent and accurate measurements, reducing errors and allowing rapid intervention in the event of deviations. The implementation of this system not only demonstrated high reliability, with average accuracy above 90%, but also facilitated continuous control and efficient data management, emphasizing the importance and benefits of integrating advanced technologies in the dairy industry.
