    Businesses operating in 21st century are face many key challenges, including profitability, competitiveness, globalization, speed of change, economic growth, and technology, constrained by low production capacity due to lack of upgrading. and standardization of the processes, for which in the present research work a time and motion study is developed at slaughterhouse E.T "Elina Torres" in production processes of its bovine line. Study is based on the activities of the slaughter process description through process diagrams development, as well as the time study analyzing performance factor, number of samples and supplements to establish standard times. production process and determine the production capacity, to validate the improvements through the FlexSim software As a result, standard times of each process were obtained from the disinfection bath to the boat, obtaining a standard time of 5.64 minutes in the bleeding process, equivalent to an installed weekly production capacity of 425 slaughtered cattle. Therefore, it was determined that processes have activities that do not add value that are directed to the lack of order, cleaning, generating downtime due to the search for materials, in addition to an inadequate balancing of production lines, having workstations with unproductive times, therefore, improvements such as: application of 5s and line balancing are established. When simulating the current and proposed situation, it is observed that there is an increase of 96 cattle per week, which represents a 22.59% improvement, in addition, an efficiency of all processes is achieved with 92%, eliminating activities that do not add value and also unproductive time establishing work instructions as part of improvement control.
