Abstract: The objective of this study was to evaluate the feasibility for the implementation of a microbrewery of craft beer, in the Ambato canton of the province of Tungurahua, for which a market, technical, administrative, and economic-financial study was carried out. For the market study, a survey was carried out to determine if the consumer is willing to purchase a cloudy, blonde craft beer with a medium-high degree of alcohol of 8.4 degrees of alcohol to determine the acceptance percentage of the product. Through the technical study, the location, distribution of the plant, production capacity, raw material and equipment for production were determined. With the administrative study, the strategic formulation, organization chart and job description were carried out. The name of the company as a brand is called GUAYTAMBTA, with its slogan the taste of flowers and fruits. And with the economic-financial analysis, a net present value (NPV) of 13,105.00 dollars was obtained, with an internal rate of return (IRR) with a percentage of 49.21, a cost-benefit ratio (B / C) of 1, 17, a Break-even point (PE) corresponds to 53,914.50 dollars and a time of three years and six months for the recovery of the investment that shows the profitability and viability of the project.
Description: El presente estudio tuvo por objetivo evaluar la factibilidad para la implementación de una micro cervecería de cerveza artesanal, en el cantón Ambato de la provincia de Tungurahua, por lo cual se realizó es estudio de mercado, técnico, administrativo y económico-financiero. Para el estudio de mercado se realizó una encuesta una encuesta para determinar si el consumidor está dispuesto a adquirir una cerveza artesanal rubia, turbia con un grado medio-alto en alcohol de 8,4 grados de alcohol con la finalidad de determinar el porcentaje de aceptación del producto. Mediante el estudio técnico se determinó la localización, distribución de la planta, capacidad de producción, materia prima y equipos para la producción. Con el estudio administrativo se realizó la formulación estratégica, organigrama y descripción de puestos. El nombre de la empresa como marca se denomina GUAYTAMBTA, con su eslogan el sabor de las flores y frutas. Y con el análisis económico-financiero se obtuvo un valor actual neto (VAN) de 13.105,00 dólares, con una Tasa interna de retorno (TIR) con un porcentaje de 49,21, una relación costo beneficio (B/C) de 1,17, un punto de equilibrio (PE) corresponde a 53 914,50 dólares y un tiempo de tres años y seis meses para la recuperación de la inversión que muestra la rentabilidad y viabilidad del proyecto.
