Carrera de Alimentos, 2023-03) Zapata Vargas, Sorayda Maricela; Ortiz Escobar, Jacqueline de las MercedesThis project allowed to determine the feasibility for the creation of the Lácteos Zapata microenterprise, for the production of milk kefir with blackberry jam in the canton of Saquisilí, which consists of a market, technical, organizational and financial study. The market study allowed to determine the purchase intention and consumption trends of potential consumers in the urban area of the Saquisilí and Latacunga canton. In the technical study, the technology for the production of a product of good sensory quality was selected, as well as the equipment, inputs and utensils for the production and a plant design elaborated with criteria of Good Manufacturing Practices. Through the organizational study, the mission, vision, values and policies of the microenterprise and the most appropriate organization chart were established, based on which the functions and professional profile of the personnel were specified. Finally, with the financial study, the investment that needs to be made for its implementation and financial indicators such as the Net Present Value (VAN), Internal Rate of Return (IRR), Investment Recovery Period (PRI), Profitability on the Investment (ROI) and Breakeven Point (PE).
