    This study analyzes the jobs in the post-harvest area, to optimize production times in the AGROGANA company, where to carry out this activity, it begins with the recognition of the production process within the post-harvest area, which They are divided into mallero, classifier, packer, cut, finished, classified in the cold room, separated, fingered, packed and shipped. The study was carried out in each work area, with an analysis of the activities carried out and the taking of times by means of a stopwatch, subsequently proceeding to determine the critical path, continuing with the selection of alternatives, defining their routes and minimum times to delay, resulting in a solution that minimizes the critical path defined above. Finally, it is proposed to carry out a standardization of times and movements, taking into account the critical routes in each alternative, thus reducing unnecessary times and existing delays in the execution of the activities that make up the same.
