    Frecuencia de Listeria spp en muestras de carne de pollo (Gallus gallus) que se expende en el cantón Ambato

    Chicken meat is one of the largest foods consumed by humans worldwide and with a high risk of contamination due to its physicochemical properties. Its consumption is related to ETA, highlighting Listeria spp., a bacterium with importance at a health and food safety level. The present study focused on evaluating the frequency of Listeria spp. in samples of chicken meat that is sold in authorized and informal points of the Ambato canton, Tungurahua, Ecuador. Aerobic mesophiles were counted, seeded in selective media such as Chromogenic Listeria agar, and morphological and biochemical tests to select the presumed Listeria spp. Among the results obtained, the contamination analysis of aerobic mesophiles was carried out and it was found that the samples of the authorized and informal premises had 6.53 x 107 CFU/g and 8.74 x 107 CFU/g, respectively. For the probable contamination of Listeria spp., the authorized premises obtained results of 62.2% (28/45) and 42.2% (19/45) for the informal premises. Finally, the relationship between the contamination of chicken meat and the associated risk factors was analyzed, highlighting the hygiene of the premises, the conservation of the meat and the seller's protection measures, which intervene in the final quality of chicken meat
