    Desarrollo de un Manual de Buenas Prácticas de Manufactura para la microempresa H-Vida, ubicada en la parroquia Pilaló del cantón Pujilí

    This study focuses on a Good Manufacturing Practices Manual for the microenterprise H-Vida, located in the Pilaló parish of the Pujilí canton. The purpose is to prepare facilities and process conditions so that in the future, they can obtain certification by ARCSA, with the objective of generating high-quality and safe products for consumers. Subsequently, a diagnosis of the current state of the microenterprise was carried out using a verification guide consisting of 211 items and three levels of scale: comply with the total requirements, Does Not Comply for conditions that are not under the standards of the Standard, and Not Applicable, when the requirements do not fit the establishment's activities due to the nature of the process and food. The results revealed 31 percent compliance, 52 percent non-compliance, and 17 percent of items not applicable. Standard operating and sanitation procedures were then developed based on the nonconformities and requirements identified in the microenterprise, in accordance with Resolution ARCSA-DE-2022-016-AKRG. Finally, an action plan has been drawn up that includes necessary corrective measures is adjusted to the suggested short-term budget. The main objective of this plan is to propose the necessary corrections to the nonconformities identified in the establishment so that the microenterprise can obtain good manufacturing practice certification from the regulatory agency, ARCSA, in the future.
