    Inhibición de la actividad enzimática de lisozima de clara de huevo de gallina por presencia de metales pesados

    Egg white lysozyme is an enzyme with antibacterial and antiviral activity. Many researches has been done to modify or enhance this activity. In this study was evaluated, if the presence of heavy metals such as Mercury (Hg), Lead (Pb), Nickel (Ni), Boron (B), Cadmium (Cd), Chromium III and VI (Cr III and Cr VI) influence the enzymatic activity of this enzyme. Trought a statistical analysis was found that the metals used reduce the enzymatic activity of hen egg white lysozyme, Lead with concentration of 0.01M with 12 hours of incubation and lead with concentration of 0.03M with 4 hours of incubation it shows less influence on lysozyme, reducing its activity by approximately 30 percent, making the decrease in absorbance is lower, while the treatment containing Chromium VI with concentration of 0.01M with 24 hours of incubation has greater influence on the Lysozyme, inhibiting its activity almost entirely, reducing it by 97 percent.
