Item La cocina ancestral y la experiencia turística en la comunidad amazónica Cotococha(Universidad Técnica de Ambato-Facultad de Ciencias Humanas y de la educación -Carrera de Turismo, 2025-01-17) Palacios Robalino Angie Gissel; Camilo Francisco Torres Oñate; Universidad Técnica de Ambato-Facultad de Ciencias Humanas y de la educación -Carrera de TurismoAncestral cuisine is a cultural manifestation that is represented through the knowledge of a people; the tourist experience is the factor that measures the perception of a visitor after making a trip; by complementing them, a space of coexistence is created through culture. The aim is to describe ancestral cuisine in the tourist experience of the Amazonian community of Cotococha; the research focuses on understanding the tourist when experiencing the cultural richness of a place through culinary art. Using a quantitative approach, two instruments were applied for data collection; for the variable “ancestral cuisine” the Food Atlas Cards that allowed to know about the primary products and preparation of dishes of the community; for the variable “tourist experience” the tourist experience survey was applied based on five fundamental dimensions composed of several questions that were analyzed in the SPSS. The results of the research revealed that gastronomic motivation is a factor that attracts tourists to visit Cotococha and to seek authentic experiences that provide knowledge about ancestral wisdom. It was concluded that ancestral cuisine tells the story of ancestors and is related to a visitor's travel expectations.
