Item La innovación gastronómica y la cocina tradicional de la ciudad de Ambato(Universidad Técnica de Ambato-Facultad de Ciencias Humanas y de la educación -Carrera de Turismo, 2025-07-04) Ordoñez Cadena Manuel de Jesús; Torres Oñate Camilo Francisco; Universidad Técnica de Ambato-Facultad de Ciencias Humanas y de la educación -Carrera de TurismoThe objective of the research was to determine gastronomic innovation and traditional cuisine in the city of Ambato, the purpose was to identify the new culinary techniques used in the environment, as well as the traditional preparations preferred by diners. The relevance of the work lies in giving value to Ambato's cuisine, while using innovative trends that allow promoting traditional preparations without losing its identity. A quantitative methodology was used, with a non-experimental crosssectional design, simple random probability sampling, an observation sheet was applied to identify innovation techniques and a Likert scale survey of consumers to determine the degree of preference of representative dishes of the city. Therefore, the results showed that techniques such as foam, vacuum cooking, fusion cooking, gelling, pickling and reduction are applied in the dishes of several restaurants in the city, and it was also evident that llapingacho, colada morada and empanadas de viento are the favorites of those surveyed, giving as a proposal an innovative menu of the aforementioned dishes. In conclusion, Ambato is a city with well known traditional dishes, which are looking to innovate, to give a modern approach to the presentations.
