Carrera de Alimentos, 2023-09) Frutos Valle, Joselyn Michelle; Ortiz Escobar, Jacqueline de las MercedesThe elaboration of a manual of Good Manufacturing Practices (GMP) for the dairy factory ARPAL, Píllaro-Tungurahua aims to improve the sanitary quality of the production process and guarantee the safety of the products produced. The manual establishes the minimum requirements necessary to obtain safe high-quality products, reducing the risk of cross-contamination, guaranteeing the traceability of the products. The implementation of the manual will allow the dairy factory to comply with the quality and safety standards required by regulatory bodies, and guarantee consumer satisfaction. For the elaboration of the manual, a diagnosis of the current situation of the company was made in order to determine the degree of nonconformities with the requirements of the resolution, ARCSA-DE-067-2015-GGG, which allowed establishing the necessary measures to prevent contamination. An action plan was proposed for the owner to implement in order to overcome the nonconformitie. In addition, standard operating procedures and sanitation (POE) and (POES) were developed, based on the requirements of the microenterprise, from the reception of raw materials to the dispatch of the final product. Finally, was developed the GMP manual allowed the ARPAL dairy factory in order to improve the quality of its products and ensure its safety for human consumption. Its implementation will allow the company to comply with the required quality standards and increases consumer confidence and satisfaction and improves the company's competitive position in the market.
