Carrera de Ingeniería Mecánica, 2017) De la Vega Sánchez, Francisco Franco; Paucar Samaniego, Mayra AlejandraThe objective of the project research project is to design and build a banana dehydrator by using passive solar energy for what was done a study between the different types of solar dehydrators that they were: direct, indirect, and mixed, taking into account parameters such as Air temperature, air flow velocity, rapidity of moisture extraction, final product quality, physical dimensions and cost; being the best alternative the mixed system. Afterwards the design of the machine was realized to obtain necessary measures in the construction. Before the construction of the solar dehydrator, a simulation was made for the obtaining some parameters that helped in the construction; At the end, the construction of the solar dehydrator with mixed system and data, within one week (5 days), without air extractor dehydrate the banana sample to 12.7% moisture, while with extractor air was reached in only two days. The value of residual moisture in the fruit was corroborated by a moisture analysis done by the Laboratory of LACONAL of the Technical University of Ambato.
