dc.descriptionEl presente trabajo de investigación se lo ejecutó con el fin de incrementar el tiempo de conservación pos cosecha de la mora (Rubus glaucus) mediante la utilización de recubrimientos comestibles a base de aceite esencial de canela (Syzygium aromaticum) y clavo de olor (Cinnamomum verum) con una concentración de 0,04%, 0,06% y 0,08%, donde se estudió parámetros fisicoquímicos como pH, sólidos solubles, firmeza, índice de madurez, pérdida de peso e incidencia de microorganismos; se lo realizó en la Facultad de Ciencias Agropecuarias, Universidad Técnica de Ambato. Para la evaluación se aplicó un diseño bloques completamente al azar (DBCA) con cinco repeticiones, se efectuó el análisis de variancia (ADEVA), de acuerdo al diseño experimental planteado y se realizaron las pruebas de significación de Tukey al 5%, para diferenciar entre tratamientos, se registró que el tratamiento A1B2 (Aceite esencial canela 0.06%) resultó ser un tratamiento con mayor firmeza a lo largo del período de almacenamiento, terminando con una firmeza media de 0.14 lbf; en el porcentaje de incidencia de microorganismos en los tratamientos A1B2 (Aceite esencial canela 0.06 %) y A2B1 (Aceite esencial clavo de olor 0.04%) presentaron un 40 % de incidencia resultando ser los mejores. En la variable pérdida de peso el tratamiento A1B1 (Aceite esencial canela 0.04%) presentó una menor perdida con una media de 20.92 %. En el índice de madurez el tratamiento A2B2 (Aceite esencial clavo de olor 0.06%) con una media de 3.68 presento el menor índice de madurez. En los sólidos totales el Testigo 2 (Sin recubrimiento) fue el que presentó una elevada cantidad con una media de 9.52 °Brix. Mientras que en pH no hubo diferencia significativa, pero todos los tratamientos estuvieron dentro del pH adecuado para la mora según la Norma INEN 2427.es_ES
dc.description.abstractThe present research work was carried out in order to increase the post-harvest conservation time of the blackberry (Rubus glaucus) by using edible coatings based on cinnamon essential oil (Syzygium aromaticum) and clove (Cinnamomum verum). ) with a concentration of 0.04%, 0.06% and 0.08%, where the physicochemical parameters such as pH, soluble solids, firmness, maturity index, weight loss and incidence of microorganisms have been studied; It was held in the Faculty of Agricultural Sciences, Technical University of Ambato.
