Abstract

The food supply chain of collective catering centers for children and adolescents living in poverty is a subject that calls for special attention, since its efficient management contributes to improving the quality of the service offered. For this reason, the main objective of this research is to develop an alternative to control the supply chain of the Social Action Solidarity of Education and Rescue (SASER) foundation supported by tools of the administrative process, which with the Technology help provide support for decision making in the area of food. The diagnosis of the current status of both the foundation under study and the foundations of the Eradication of Child Labor (ETI) context indicate that the problem lies in the management of inventories of perishable products, since they do not have the tools to justify the Control of this process and to generate relevant reports, in a timely manner. Therefore, the fundamental result of the study is the proposal of a methodological alternative that supports the inventory control of perishable products, made up of the elements of the administrative process: diagnosis, planning, organization, management and control; In addition, a prototype of a management information system was presented, which provides reports on aspects relevant to the decision making process in the food area.
