Abstract: In this paper the development of technology to produce natural jelly beans made with a thickener based mashua and oca. the experimental design of three factors AxBxC was used in which the Factor A (tubers) a0 (25 percent mashua - 75 percent oca), a1 (50 percent mashua - 50 percent oca), a2 (75 percent mashua - 25 percent oca) ; Factor B (Stevia sweetener) b0 (10 percent) and b1 (15 percent) and factor C (cooking time) c0 (3 min) and c1 (5min). 12 treatments of which the experimental responses reported were obtained: pH, titratable acidity, moisture and soluble solids (Brix degree) made for 30 days; By sensory evaluation of experimental treatments was obtained that the best treatment was the jelly beans (25-75) percent of Mashua and Oca with 15 percent Stevia 8 minutes cooking belonging to Treatment 4 with the code (367); these gummies were performed respective analysis of microbiological quality (total aerobic, molds, yeasts and total coliforms, proximal analysis, texture and shelf life. This T4 (367) treatment will not be governed by the Standard NTE INEN 2217 ( 20012) since not possess preservative added the microbial load on day 14 exceeded the ceiling in both aerobic mesophilic bacteria and molds, to have a high microbial load began accelerated texture deterioration, altering the product moisture and eventually reducing its shelf 1 month 11 days life. the decision to add a preservative (potassium sorbate) following the Standard NTE INEN 2074 (2012) to treatment T4 preservative with the code (367 Sorbato) that kept microorganisms was taken under the limits of the Standard NTE INEN 2 217 (2012), giving it more texture and stability and with a shelf life of 4 months 62 days.
Description: En el presente trabajo se realizó el desarrollo de la tecnología para elaborar gomitas naturales con un espesante a base de mashua y oca. Se empleó el diseño experimental de tres factores AxBxC en los que el Factor A (tubérculos) a0 (25 por ciento mashua - 75 por ciento oca), a1 (50 por ciento mashua – 50 por ciento oca), a2 (75 por ciento mashua – 25 por ciento oca); Factor B (edulcorante Stevia) b0 (10 por ciento) y b1 (15 por ciento) y Factor C (tiempo de cocción) c0 (3 min) y c1(5min). Se obtuvieron 12 tratamientos de los cuales se reportan las respuestas experimentales de: pH, acidez titulable, humedad y sólidos solubles (grados Brix) realizados durante 30 días; Mediante la evaluación sensorial de los tratamientos experimentales se obtuvo que el mejor tratamiento fueron las gomitas de (25-75) por ciento de Mashua y Oca con 15 por ciento de Stevia a 8 min de cocción que pertenecen al Tratamiento 4 con el código (367); a estas gomitas se les realizaron los respectivos análisis de calidad microbiológica (aeróbios totales, mohos, levaduras y coliformes totales, análisis proximal, textura y tiempo de vida útil. Dicho tratamiento T4 (367) no se rigió a la Norma NTE INEN 2 217 (20012) ya que al no poseer conservante adicionado la carga microbiana en día 14 sobrepasó el límite máximo tanto en aeróbios mesófilos como en mohos; al tener una alta carga microbiana empezó el deterioro acelerado de la textura, alterando la humedad del producto y finalmente reduciendo su tiempo de vida útil a 1 mes 11 días. Se tomó la decisión de añadir un conservante (sorbato de potasio) siguiendo la Norma NTE INEN 2 074 (2012) al tratamiento T4 conservante con el código (367 Sorbato) lo que mantuvo a los microorganismos bajo los límites de la Norma NTE INEN 2 217 (2012), dándole mayor textura y estabilidad y con un tiempo de vida útil de 4 meses con 62 días.
